OH. MY.

This banana cake is devine. I had 3 manky bananas in the fridge and went searching for new recipes (very over banana bread). Replaced 50g of the almonds (and used almond meal) with shredded coconut. Lovely. Any suggestions on how to use up shredded coconut?! I'm ashamed to say I had this with a latte for breakfast this morning. Mind you, I figure it has no butter, so much better than the nasty things we get in most cafes. Thank you :)

I don't know if you're bothered but this recipe has been republished at http://www.whatcouldicook.com/recipes/1314/banana-amp-almond-cake and seems to be presented there as the idea of that site's owner - I couldn't even see an acknowledgement of your authorship or link to your site, yet he even reprints your exact words "The supermoist banana and almond cake is really lovely, although I did dial up the vanilla to cover the banana flavour, I found myself really loving this cake."

I too, don't like "raw" bananas - even just thinking about them whilst I write this makes me feel queasy how pathetic is that! - but I can eat "cooked" banana no problem - go figure!

I'm planning on making the almond & banana cake this afternoon - another gluten free sweet thing to add to the repertoire.

Cheers Jane

Y,
avocado & icecream...definitely sounds out there...glad you love avocado now

susan,
yeah the banana smoothie thing is a bit of a classic...when you do get your hands on some figs recommend giving it a go

mallika
it is funny how as you get older variety is more important...damn happy about that

jeff,
the cake really lives up to it's name. if your wife is not allergic to other nuts...mabey cashews or maccadamias would work as a substitute or even pecans or walnuts although they would change the flavour..could be a good thing

thanks helen, get into some banana cooking (still feel a bit weird about saying that ;)

zarah maria,
thanks. if you're ever heading to sydney we should have a glass of champagne or 2

thanks ellie

rob,
no I haven't read steingarten but he's on my list. you don't have to wait until summer for the icecream. am thinking it would be perfect with hot pecan pie or apple crumble...thanks for dropping by.

Jules, I applaud your attempts to overcome your food fears. I don't know if you've ever read Jeffrey Steingarten's, The Man Who Ate Everything, but his introduction to the book is the story of his quest to rid himself of his food phobias -- kimchi, dill, swordfish, Greek food, etc. -- when he was hired as a food critic. He's fairly successful, and his success is due to a regimen he devises based on the science of food aversions. It's fascinating and entertaining, and Steingarten is a glorious writer. That's my rather longwinded way of saying your post reminds me of that article, and I hope you get a chance to read his books.

That said, I'm definitely a banana fan (and an even bigger fan of figs and vanilla, thank you), and these dishes look wonderful. I will have to try both the ice cream and the smoothie when this cold, Canadian winter is a thing of the past.

On a separate note, you have a fascinating personal story and an equally charming blog. Consider me your newest fan.
