I'm a big fan of lamb and one look simple and great. May I suggest using evernote.com for your dad. You can clip interesting and easy recipes for your dad and hopefully he can follow them :)

I just made this recipe last night and it was so easy that it seems like it should not be so delicious. Hub even liked the chickpeas which is huge. I substituted a bit of tomato paste because I didn't have canned, but still lovely.

I recently stumbled across your blog and love it!! I just moved out of home and as a novice cook I find your blog so inspiring. I cooked your lambshanks w chickpeas earlier this week and and also the lambshank pies and both were delicious meals, best things I have ever cooked. Thanks and keep on blogging :)

Gorgeous shanks! And once you're done teaching your dad how to cook, want to tackle mine? Mind you, my father is a tad more hopeless - we've lost hope of ever teaching him how to make fried eggs :( Or, I could just wait for you to write that book :)

Have you ever seen something more comforting than those lambshanks all neatly tucked together in a casserole. Wonderful.

Aw, bless. Good luck to you both! I have some idea of what it's like - my dad's just the same. The additional frustration for me, though, is that he used to cook all the time - and well - when I was little (when my mum was ill, and then after she died). But since I left home, he's done nothing. Now, though, he's showing signs of taking an interest again. This dish would be right up his street, too.
