How to make a 1 hour 20 minute meal in only 15 minutes

I recently got this question about making good meals fast:

“Jules, I’m always struggling with balancing work and family and getting dinner on the table night after night. I barely have enough time in the day as it is, but was wondering if you had any tips on how to avoid takeout or junk food and make delicious, healthy meals fast?”

As a matter of fact yes!

Even though I love to cook, this was a big problem for me, too.

That’s why I’ve spent the last two years cooking and experimenting with ways to make great meals — fast. And recently I wrote down my favourite quick meals for the eCookbook 5 Ingredients 10 Minutes.

But the thing, is there were heaps of awesome recipes that didn’t quite make the time limit. So I created a class at the Stonesoup Virtual Cookery School to share all my best 15 minute meals.

Many of these meals look (and taste) like they’d take hours to make. But they only take 15 minutes and sometimes less.

And guess what?

My boyfriend, the Irishman, loves them too.

And he has very high standards when it comes to food. Bit of a food snob, really.

So how can you make a 1 hour 20 minute meal in 15 minutes?

Let’s take an example, say a hearty stew of sausages and lentils.

Years ago I remember making a version of this recipe, probably from Australian Gourmet Traveller, or another magazine like that.

The steps went something like this:
1. Dice a couple of onions and soften them in a pan – 10 minutes
2. Transfer onions to an oven proof dish. Brown sausages in the onion pan – 10 minutes
3. Transfer browned sausages to the oven proof dish along with some dried lentils, salami or bacon, a few bay leaves, garlic, some red wine and chicken stock. Cook in the oven at a moderate heat for about an hour, or until lentils are tender – 1 hour+

Total cooking time: 1 hour 20 minutes+

Is it possible to make a similar meal, that tastes just as good, in only 15 minutes?

Absolutely!
