About the author

jules clancyHi there! My name is Jules Clancy.

I’m a first and foremost a food lover who adores her veggies. The type of girl who plans her holidays around restaurant reservations.

In my last job I had an hour commute each way. And that was on a good day. So I started to challenge myself to come up with healthy meals that still tasted great in the shortest time possible. I found that by keeping my ingredient list to around 5 items, I was able to get dinner on the table in as little as 10 minutes.

And the thing that kept surprising me was just how good these simple, fresh meals tasted. I was even able to keep my fiance happy and he has VERY high standards when it comes to food.

I have a degree in food science but I’m not a nerd, really. In January 2010, I packed in my day job as a chocolate biscuit designer for Australia’s largest biscuit company to follow my dream of cooking and writing about food for a living.

The other thing you should know about me is that I love simplicity and making things as quick and easy as possible. I just adore the fact that I’ve been able to combine my two passions for good food and simplicity in my blog and my business.

I founded the Stonesoup Virtual Cookery School because I believe that the ability to cook simple, healthy, delicious food is a basic skill, like reading, that everyone should and can have.

When I’m not cooking, writing about food or taking photographs [of food], I can be found hanging out with my husband, ‘the Irishman’ and our son Fergal. Or indulging my passions for growing my own veggies, cookbooks, long walks in the country, red wine, red shoes and blue cheese.

About my food philosophy

As I am constantly discovering, when you strip food back to the essentials and let the ingredients speak for themselves, it can only mean good things from a flavour perspective.

Don’t let anyone, especially those cheffy types, convince you that you need ‘layers of flavour’ and an ingredients list as long as your arm. That’s one style of cooking that can taste great if someone else is preparing it and cleaning up.

For home cooking, I believe that keeping the number of ingredients and the steps involved to a minimum is where it’s at.

My philosophy as to what constitutes healthy eating is that veggies are the way forward. I’ve dabbled in vegetarianism but am much happier as an omnivore.

Inspired by Tim Ferriss’ Slow Carb diet and Gary Taubes’ great book ‘Why We Get Fat’, I have been mostly replacing grains in my diet with vegetables since the beginning of 2011 and am incredibly happy with the results. I also try and minimise my sugar intake but tend to have a sweet indulgence at least once a week.

I’m also firmly a believer in the health benefits of dark chocolate and red wine (although not necessarily together).

About my recipes

Most of the recipes on Stonesoup contain only 5 ingredients and are designed to be made in minutes. However, if you dig back in the archives, you will find more complicated dishes from my pre-minimalist days.

I always take great care to make my recipes as straight forward and logical as possible. Given that the Stonesoup readership is from all over the world, I include both metric and imperial measurements.

If you come across any problems please, please drop me a line so we can figure it out. I’d hate to be responsible for a kitchen catastrophe.

About the photography

All the photography on this site has been taken with my trusty Nikon D700. I find that natural light is critical for appealing food photography so have given up trying to take photos at night.

I believe that with food, just as in life, there is beauty in imperfection. My food styling philosophy is to keep everything as natural and simple as possible and most of all for it still to be real and edible after the picture has been taken. No trickery or elaborate props here.

Hi Jules,

My partner Tammy introduced me to your blog and I’ve been enjoying reading about your ideas! :) I agree that natural light is best for most shots. Although you may also consider trying out a 50 mm lens for indoor food shots without much or any natural light. Tammy uses a 50 mm lens for her Nikon D5000 when she does food photography and portraits to let more light in. Below are a few examples of Tammy’s food shots indoors after sundown.

Hi Jules,

I’ve been cooking for many years and have always believed in the less is more attitude.

Not only do I plan for leftovers, I purposely make them. They are more like MRE’s, meals ready to eat. I figure if I am going to make some seasoned broiled red potatoes, why not make up 10 lbs, eat our share and freeze the rest in portioned bags? It is not only good reheated, but makes other meals quick and easy.

I have been very disappointed with seasoning blends on the market shelves for years. Too much salt (or not enough) to much of this, too little of that, flavors that you just get tired of. I have been creating my own spice blends for what seems to be eons, and finally did what my in-laws suggested. Bring them to the marketplace.

My first blend is Chef of the Future’s “Not Your Average Cajun Seasoning”. Tweaked to perfection, good on most everything (even pumpkin seeds!) The website is,

I recently came across your blog and have already fallen in love with it. I just ordered the cookbook also…it sounds just absolutely perfect – so much so that I didn’t balk at the 10$ shipping fee to get it across the ocean! (I normally ONLY purchase online if I can get free shipping deals :)

Thanks for your feedback on my pricing.
I have my print book in Australian dollars because it’s mostly only Australians buying it.
With my new ebook though, my audience is much more global – and actually about 70% of my blog readers are based in nth america which is why I decided to price the ebook in USD. Also, since the Aussie dollar is so strong at the moment I felt it was a reasonable price when converted back to AUD. Of course if the exchange rate changes dramatically I’ll rethink my pricing,
Hope that explains where I’m coming from.

Living and sailing a boat full time I am always interested in fast, good concepts in food. You fit beautifully….
Making our own power, water etc and living ‘off the grid’ for much of the year as well as having a deep love of good food your philosophy perfectly matches my lifestyle.

Both of them appear to have great recipes and information, unfortunately I find it very hard to read the silver on the stark white background. The site looks great, but I think a little more contrast could do wonders for it.

I will be back but it will only be for short periods of time.

Jules, may I pick up on Marius’ comment. Your pic is a bit stern. Not a critique – an observation. I have visited before, but this is the first time I got to see your video in which your natural, easy beauty and warm personality just simply radiates. In my very humble opinion your pic and your vid are almost like 2 different people. I really like the simplicity of your pic – but first impression – it IS stern. It says, ‘I mean business!’ – then your vid says sweetly, ‘Hi, I’m Jules…’
Perhaps that is what he meant by ‘scary’ – or he is just an angry troll. : )

If YOU like it – that is all that matters. Plus it always grates somewhat that women have to be smiley, wanton creatures in their PR pics, while men, (particularly male chefs!) can look positively snarling in theirs. (You are not positively snarling my dear – this does not refer to you in any way).

His statement about ‘the more ingredients the richer the taste’ might also indicate the depth of his knowledge generally.
As you say gracefully, each to their own. However, I have never gone to a football match and complained that it isn’t the ballet.

Love the photography, love the saturated colours. Marius is a dick, 15 ingrediants doesn’t make anything better, it just makes it more complicated. Case in point, my 5 ingrediant flourless cake recipe…
4 (1 ounce) squares semisweet chocolate, 1/2 cup butter, 3/4 cup white sugar, 1/2 cup cocoa powder, 3 eggs, beaten…Preheat oven to 300 F. Line the bottom of an 8 inch round cake pan with parchment, then lightly butter and dust with cocoa powder. Melt the chocolate and butter together, stir in sugar, cocoa powder and eggs. Pour into pan and bake for 30 minutes, let cool in pan for 10 minutes and turn out onto wire rack.

Only 5 ingrediants…

Howdy Jules: Wow, was reading Tim Ferris’s 4 hour work week, saw the link for his new book and decided I need to buy both! I’m in Portland, Or. USA, signed up for your great email stuff as well.

I am 66 years young, retired after 44 years in Law Enforcement, now a full time college student in Emergency Management. After your horrible quake down there methinks you will need more EM trained folks down under. I have a simple question please, you list yourself as a food scientist, could you please elaborate on what kind of training you have received. I know that our version of english is a bit different from yours, but I love your site, and the wholesomeness of your recipes shown. Simple ingredients for simple living….I love it!
