You should have seen the look on my Irishman’s face when I told him we were having fish soup for dinner. On a Saturday night even. Priceless…

Actually he looked so forlorn I had to assure him it would be Ok. There’s chorizo. And I can put spuds in it.

He still looked skeptical but with the mention of potatoes he agreed. Definitely the toughest sell I’ve had to make so far in the Jules & David Project…

Tomato Bread

When I was staying in the beautiful city of Barcelona a few years ago I fell in love with the local starter / snack of toasted bread rubbed with garlic and the cut side of half a tomato. It feels a bit weird to be discarding the tomato flesh but once you try it, you’ll see where those crazy Catalonian kids are coming from.

Tanis serves his with an anchovy but I didn’t think it needs the extra garnish.

Fish Soup with Mussels and Chorizo

since they didnt have any mussels at the market i decided to swap them for some steamed waxy potatoes to make the soup more Irishman-friendly. A good thing I did.

We both loved the soup. I was reminded how much flavour there is in home made stock. Totally worth the effort!

The other thing that made this soup so amazing was the roasted pepper sauce we stirred in at the end. I tasted before and after the peppers were added and the flavour difference was seriously amazing. My Irishman will tell you it was the way he roasted the peppers on our charcoal BBQ to give maximum smokiness but I think oven roasted peppers would have still been yum.

I made a mental note to consider using roasted peppers instead of my knee-jerk reaction of tomatoes to give richness to soups and sauces.

Oh and I should mention my Irishman did concede that the soup was worthy of Saturday night billing!

Goat Cheese with Honey

As much as I adored the first to courses the real winner for me was this idea for a stunningly simple yet super tasty dessert. Get a good soft goats cheese and drizzle with honey. Serve with walnuts or pecans if you like. We’re talking a-maz-ing! There were flavours of a baked cheesecake. And a killer sweet and salty taste sensation.

Will definitely be keeping this one up my sleeve for a quick and easy but super impressive dinner-party-worthy dessert.
