Salmon, Pea & Prosciutto Oven Supper

Ingredients

  • 2 salmon fillets
  • 2 slices prosciutto optional
  • 400 g frozen peas
  • 1 lemon
  • 1 small bunch parsley mint or basil leaves
  • pesto or pine nuts to serve

Instructions

  1. Turn your oven to 250C (480F). Line a rimmed baking sheet with paper.
  2. If using the prosciutto wrap each salmon fillet with the prosciutto. Sprinkle with a little salt (or more salt if no prosciutto). Place salmon on the tray. Scatter around the frozen peas (no need to defrost). Halve a lemon and place on the tray.
  3. Pop tray in the oven and set your timer for 10 minutes. Put your feet up.
  4. When the timer goes, check the salmon - it may need a few minutes longer depending on your oven.
  5. When the salmon is cooked, serve with herbs and pine nuts (if using) scattered over. And if using the pesto, place a generous dollop on top of each salmon fillet.
