  • 2 small avocado (250g / 9oz)
  • 50 g salted butter softened
  • 2 tablespoons lime juice
  • 1 sprig tarragon or dill (optional)


  1. Puree avocado, butter, lime and herbs in a small bowl of your food processor. Or with a stick blender.
  2. When smooth and creamy, taste and add a little salt or more lime if needed.
  3. Refrigerate for 5-10 minutes to firm up a little before serving.
