Mushrooms with Lentils

  • 3-4 tablespoons butter
  • 4 large flat mushrooms
  • 250 g cooked lentils
  • 1-2 tablespoons tomato paste
  • 1 bunch flat leaf parsley


  1. Slice mushrooms. Heat butter over a medium heat in a large frying pan. Add mushies and cook, stirring every few minutes or until mushrooms are browned and tender. About 10 minutes.

  2. Add cooked lentils and tomato paste. Stir well and cook until warm. Just a minute or two.
  3. Taste. Season with salt. Serve with parsley on top.
