Heat a small frying pan / skillet on a high heat. Add a splash of oil and let is heat for a few seconds then add the frozen cauli breaking up any chunks. Cook cauli, stirring until defrosted.

Then add the eggs and frozen peas and keep cooking and stirring until the eggs have set and scrambled into little grains of 'rice'. You want it to look dry and no longer snotty or runny.

When you think you're almost there, remove from the heat. Stir in the soy sauce. Taste and add more if needed. Serve with nuts on top (if using).
