It would have to be cauliflower.

I love it so much.

Like the conspicuously green brassicas such as broccoli, cabbage and kale, it’s packed with nutrition.

And this unassuming veggie is so versatile.

I love how it absorbs flavours. I love its texture.

And I love that it’s Low Carb.

I pretty much always have a head of cauliflower in the fridge.

It lasts for weeks.

Yay for cauli!

7 Simple Ideas for Cauliflower

1. Roast Cauliflower
My favourite way to eat cauli. I usually add some spice like in this Spiced Roast Chicken & Cauliflower Salad with Tahini Maple Dressing or this Spiced Cauliflower Salad with Labneh. It’s also fab on its own like in this Warm Salad of Roast Cauliflower & Quinoa.

If you’re in the mood for a flavour explosion, my Miso Harissa Cauli is the best! And if you’d like some meat with your cauli, it’s hard to go past this one tray dinner of Roast Cauli with Chunky Chorizo.

2. A Warming Curry
I love how cauliflower soaks up flavours. Especially great in a simple curry with creamy coconut milk and crunchy peanuts. Also delicious (if completely un-traditional) in a Thai style curry.

3. A Good Mash
If you’re looking for a lighter, more nutritious alternative to mashed potato a simple cauli mash is the answer. Try this cheesey mash if you want a close match to traditional mash. Or this version with cashew and coconut milk for a dairy-free mash.

4. In Soup
I love love love cauliflower in soups. Especially this slightly unusual Turkish Cauliflower & Yoghurt Soup or this Chunky Cauli & Sausage Soup with Parsley Oil.

5. Cauliflower ‘Pizza’
Yes this isn’t the same a ‘real’ pizza, but my Cauliflower ‘Pizza’ is a super delicious weeknight meal. And the only way I’ve been able to convince my little eaters to enjoy cauliflower as much as I do.

6. An Amazing ‘Bread’
When I’m in the mood for a sandwich or ‘something’ on toast, I make myself a batch of this Gluten-Free Cauliflower & Linseed (Flax) Bread. Keep leftovers in the freezer to defrost in the toaster as needed.

7. As A ‘Hummus’
It’s a little labour intensive but soo soo delicious! Roast your cauli then puree with tahini, lemon and garlic for a new twist on chickpea hummus.

When is Cauliflower in Season?

Like most brassicas, cauliflower is best in the cooler months. Think Autumn and Winter and early Spring.

How to Store Cauliflower

I keep mine wrapped in a plastic bag in the fridge. Usually on the bottom shelf because my crisper is too full. Wrapping prevents the cauli from wilting in the dry air of the fridge. If I have a fresh cauli from the farmers market, it can easily last 2-3 weeks and often longer.

You can freeze cauliflower, but the texture softens when defrosted. Although if you’re cooking it, this won’t be a big deal.
