Cashew 'Sour Cream' (dairy-free)

Ingredients

  • 200 g cashews
  • 3-4 tablespoons lemon juice
  • 1/2 cup water

Instructions

  1. Place cashews, lemon and water in a tall jar or jug.
  2. Puree with your stick blender (or food processor) until you have a smooth creamy sauce.
  3. Taste and season with salt or more lemon if needed.
