Beautiful Beet ‘Pesto’

Ingredients
- 1 can beetroot in juice 440g / 15oz, drained
- 1 clove garlic finely chopped
- 50 g pine nuts
- 80 g parmesan cheese finely grated
Instructions

Process the beets, garlic, pine nuts and cheese in a food processor until you have a chunky paste.

Add 6 tablespoons olive oil and process until just combined.

Taste and season well.
