Beautiful Beet ‘Pesto’

Ingredients

  • 1 can beetroot in juice 440g / 15oz, drained
  • 1 clove garlic finely chopped
  • 50 g pine nuts
  • 80 g parmesan cheese finely grated

Instructions

  1. Process the beets, garlic, pine nuts and cheese in a food processor until you have a chunky paste.
  2. Add 6 tablespoons olive oil and process until just combined.
  3. Taste and season well.
