oxtail ravioli with gremolata
It’s amazing how intertwined food and travel can be and how one can inspire the other. In my own past pretty much every trip has been inspired by the desire to eat or drink and in the future no doubt this will continue. (Although with my recent rejection from the el bulli reservation lottery that trip to Spain and Morocco might just have to wait another year.) But what is really special to see is when someone is so captured by the food they experience on holiday that they embrace it on their return home. Read the rest of this entry »

morh fish’s perfect hangover cure
Today I’ve been living, or actually more like just ‘existing’ in a world of hurt. Now before you start sending sympathetic thoughts, I guess I need to come clean. You see gentle readers, it was all self induced, the result of some serious over indulgence last night. Yep. The granddaddy of all hangovers. Read the rest of this entry »

lamb & eggplant curry
The last time anyone can remember my dear old Dad coming to the big smoke was back in 2004 to pick me up from the airport after my winemaking trip to France. As you can imagine, it took a bit of convincing to talk him into a city visit. But persistence prevailed and on Saturday night I found myself standing on the platform at central station to greet the Canberra XPT. With fish and chips on our minds we headed to arguably the best fish café in Sydney: Fish Face in Darlinghurst. Read the rest of this entry »

beetroot pesto
There’s something about beets. Maybe its their gorgeous colour that departs a little rosy glow to your wee to remind you of what you’ve been eating or maybe it’s their brooding earthy flavour, slightly sweet but complex. Whatever it is, there’s one thing I’m sure of. I am a beetroot addict. Read the rest of this entry »

rosemary & marmalade glazed ham
One of the things that I love about life is that no matter how bad things get, there are always little surprises that keep you going and help restore your faith. Over the last couple of weeks I’ve been constantly amazed and uplifted by the kindness and thoughtfulness of everyone who has surrounded my family at this very sad time. Read the rest of this entry »

turducken with cranberry & ginger sauce
Casually drop the word Turducken into conversation and I can guarantee that the average person will respond by looking at you in a quizzical manner and saying ‘a tur-what?’ I remember asking the exact same question on my first encounter with the tri-bird concept. It was Autumn in Northern California and I was working for a rather large Sonoma county winery. One lunchtime we were sitting around chatting and somehow the conversation turned to all things turkey. At first I was certain that my colleagues were having a lend of me. Surely it couldn’t be true. Stuffing a chicken inside a duck and then the duck inside a turkey? Nooo way. Many more minutes of lunchtime banter later and the revelation that you need to debone the birds first and I began to believe in the possibility. But to be honest, really, the whole thing didn’t exactly ingnite my imagination and I went back to work that afternoon letting the whole Turducken thing fall to the back of my mind as I focused on barrels and wine. deconstructed cassoulet with a green salad
When it comes to the national days of countries other than Oz, I’m afraid to say that I’m sadly ignorant. But there is one exception. Ever since I began my love affair with France, while studying their beautiful language in high school, I’ve had a soft spot for Bastille Day. For some reason, every year on July 14th I feel the urge to celebrate with the French in some way or other. Read the rest of this entry »

basic five hour roast leg of lamb
It never ceases to amaze me how much most blokes love their meat and my gorgeous brother, Dom, is definitely no exception to the rule. Give him a lamb shank or a thick juicy steak, and he’s a happy man. Read the rest of this entry »

roast lamb shank & barley soup
It’s a well known fact that we eat with our eyes. From market shopping for fruit & veg to cruising the supermarket aisles for mass-marketed packaged goods our first judgments are based on appearance. And while this is generally a good practice to help guide us away from less-than-fresh food choices, there are times when there are great flavour rewards for taking a chance and tasting something not so good looking. kid kibbeh pies with cranberry & sumac sauce
In my little world, the month of May has proven to be anything but dull. It all began on a sunny Tuesday, May 1st to be exact. I rocked up to work expecting business as usual only to be greeted with a last minute company wide meeting in which the managing director announced that due to the poor performance of the Australian business, there were going to be cutbacks and restructuring. A few short hours later I was clearing my desk and leaving the building for the last time. Yes my friends, I was the lucky recipient of a golden handshake and on a day no less than International Worker’s Day, or Labour Day to others - nothing like a bit of irony.
