Without question.

The ability to season is the key to making quantum leaps in how good your food tastes.

And as much as salt and acid are critical to proper seasoning. There are other tricks you can employ.

Like harnessing the power of our little friend umami…

What is Umami?

Umami is a type of taste. Like sweet, sour, salty and bitter.

It’s often described as ‘savouriness’. I like to think of it as the taste of deliciousness.

Umami comes from flavour comounds called glutamates.

MSG is the most ‘infamous’. However, there are plenty of other naturally occurring glutamates that boost umami and deliciousness without any of the negative effects.

How do I harness its power?

Easy. Use ingredients containing umami.

So if a dish is feeling a bit ‘flat’, ask yourself ‘how can I add some umami?

Which Ingredients Add Umami?

My go-to umami boosters are parmesan, bacon and soy sauce.

However there are plenty other tasty ingredients that can give you a delicious umami boost including:

+ Tomatoes / Ketchup

+ Mushrooms

+ Soy Sauce

+ Fish Sauce

+ Yeast extracts (nutritional yeast, Vegemite)

+ Cheese (especially Parmesan)

+ Meat (especially bacon and other cured meats)

+ Fish (especially anchovies)

+ Stock / Bone Broths

+ Seaweed
