
I was going to begin this post with a story about how my garden is overflowing with zucchini.
The sad truth is, my veggie patch this Summer is a long way from abundant. There has been some zucchini. And enough cherry tomatoes for a couple of salads.
But that’s about it.
Luckily I’ve been getting lots of delicious zucchini from the farmers market. So I haven’t been missing out on any of my favourite zucchini treats.
It’s such a versatile vegetable the old ‘zuc’.
From falafels to salads to soups to cake(!). It’s not hard to see why it’s one of my favourite Low Carb vegetables.
6 Tasty Ideas for Zucchini
1. Zucchini Falafels
It was a memory of some perfect falafels which inspired this recipe. I wanted something less carby and fresher. And baked not fried because lets face it, large pots of hot oil are scary. My first attempts using almond meal we good but not quite right – lacking the nubbliness of a good falafel.
And then I had the stroke of genius to use seeds. Partially pulverized in the food processor they are a total winner.

2. Spicy Sichuan Pork & Noodles
I love love the unique peppery tanginess of sichuan pepper corns in this Sichuan Pork. It’s like a savoury version of sherbert. Some fun for your taste buds! I’ve made it low carb by using sprialized zucchini.

3. Zucchini Basil & Feta Soup
How can you not love zucchini? Especially when you have the combo of Zucchini Basil & Feta in this incredibly delicious soup.

4. Zucchini Pizza
Then one day I was dreaming about cauliflower pizza and inspiration stuck.
Why not zucchini?
Yes it would be green, but surely the texture would work.
And I was right!
In fact in many ways I like this Zucchini Pizza even better than the cauliflower original.

5. Zucchini Parmigiana
This delicious dinner of Zucchini Parmigiana is another idea inspired by me playing around with the weekly meal plan recipes. Don’t tell the purists, but I actually like this zucchini version more because the zucchini goes all buttery when it cooks down.

6. Secret Chocolate Lunchbox Muffins
My boys are still very much a ‘work in progress’ with my project to turn them into vegetable lovers. I do love a challenge.
In the mean time, I’ve been taking delight in adding vegetables to their lives in unexpected ways.
