The joy of a big bowl of soup is not just for Winter.

One of the best soup experiences of my life was when I was soaked in sweat…

A giant bowl of steaming noodle and dumpling soup in a back alley in sweltering Bangkok.

Apart from the deliciousness, the memory of this soup stayed with me because of how unexpectedly refreshing it was.

Today I have some of my favourite simple 6-ingredient soups. Perfect for weeknight dinners, whether you’re currently enjoying the last Summer days or on the constant lookout for signs of Spring.

The best part is that this simple soup is made with ingredients that keep in your pantry for months (if not years) so it’s a great little recipe to have in your ’emergency meal’ arsenal.

2. Chunky Cauli & Sausage Soup

While it’s not the prettiest soup, it definitely wins on flavour. Especially with the meaty chunks of sausage and the bright green flavour highlights from the parsley oil. And this is a soup that gets better after a few days in the fridge.

3. Creamy Cabbage & Almond Soup

Cabbage soup has a bad reputation. Adding the almond meal to the broth makes for a rich, creamy soup.

And the crunchy almonds on top add the extra texture and substance that all good soups need.

4. Tuscan Greens Soup

The idea of this soup came as a mash up of two classic Italian soups… Ribolitta – the famous Tuscan soup of kale and white beans. And Stracciatella – a simple Roman soup of eggs, parmesan and broth.

I love how the eggs cook down into little creamy bursts in among the dark mossy green soup. So good!

5. Spicy Roast Eggplant & Harissa Soup

If you love eggplant, you have to try this soup.

It’s amazing how rich and creamy roast eggplant can be when pureed into a soup. I love the contrast between the silky soup, the cream , the harissa kick and the crunchy nuts. Seriously I could eat this all day long.

  • I just love your recipes! I have been following you for years. I often get keto or low carb recipe books from the library, pictures look yummy But I seldom actually make a recipe from them. If it looks good, I think “I wonder how Jules would do this?” Then I check out your recipes and nearly always find something close or even better and make that.
