MONDAY
Easy Edamame Bowl – I felt like all my Christmases had come at once when I discovered my supermarket sold frozen edamame. Before then I’d only ever had these delicious fresh soy beans in Japanese restaurants. But then a whole world of possibility opened up for me.
While you can eat them as a snack. I prefer to whip them up into a savoury bowl of goodness.
It couldn’t be easier – just cover the edamame with boiling water to warm them up. Drain and then toss with cooked protein (I’ve used canned salmon but grilled salmon would be next level), drizzle over a sauce and sprinkle with a flavour bomb.
Egg fried rice for my carb lovers.

TUESDAY
Mexican Meatballs – Don’t you just love meatballs? I make them at least once every 2 weeks (sometimes more) so I’m always playing around with new flavour combos to add excitement to the humble meatball.
Like this Mexican fiesta. It couldn’t be easier – just serve your cooked meatballs on a bed of crunchy shredded lettuce with a good smoky salsa and creamy ricotta and you have a winner on your hands.
Of course you can always add tortillas or wraps for the carb lovers in your life. But I love them just as is.
WEDNESDAY
Miso Satay Eggs – There’s nothing culturally correct about these eggs. There’s Japanese miso (or soy sauce), Indonesian ‘satay’ (read peanut butter) and hot sauce but don’t let that stop you from giving them a go.
I love them with Thai ‘sriracha’ but they’re also amazing with Tabasco and I’m willing to wager that any hot sauce you like will be good here.
Although if you want to keep it in the mild and creamy sphere, a squeeze of lime is a wise addition.
Will cook this cheesey pasta and some ham for my boys.

THURSDAY
Surprise Chicken & Broccoli Bake – My friend Kate used to tell a story about her sister working in a pub in England and was put in charge of cooking even though she had zero restaurant experience. One day she put ‘Tuna Surprise’ on the menu. And the surprise was that the pasta dish didn’t actually contain any tuna.
You’ll be happy to hear this Surprise Chicken & Broccoli Bake recipe isn’t one of those types of surprises. There is chicken. There is broccoli.
The surprise is just how tasty these two everyday ingredients can become. All you need to do is give them a blast in a hot oven (or air fryer) and then serve them with a creamy dip come sauce and some pistachios for crunch.

Tofu Not-Pizza OR Pita Pizza – Easy Friday night pizza where we get to control the toppings AND the level of healthiness. No prizes for getting which option I’ll have and which option my little carb lovers will go for.

SWEET TREAT
Strawberry Ripple Cheesecake – It’s hard to go past a good cheesecake. These little individual ones are super quick to make and best of all don’t leave you with a heap of tempting leftovers.…
