MONDAY
First, I gained a deep respect for anyone who provides excellent service in a restaurant.
Second, I fell in love with Indian cuisine. Especially the food from the tandoori oven.
And while the most famous tandoori dishes like tandoori chicken centre around animal protein, I recently had the most delicious tandoori carrots at a local restaurant.
Which got me thinking of the possibilities of tandoori flavours and vegetables. Hello cauliflower!

TUESDAY
Grilled Cheese Tofu – After years of buying into the fear-mongering around soy, I decided to experiment with tofu again because it’s such a convenient form of protein.
I love how it will happily sit in the fridge for months. I love how nutritionally it counts as both protein and vegetable.
And I LOVE how it’s blandness makes it the perfect accompaniment for strong flavours.
Which got me thinking about how a slice of tofu is quite similar to a slice of bread. Which of course lead me to grilled cheese on toast. One of my old go-to meals back in my batchelorette days.
WEDNESDAY
Walnut + Brown Butter Omelette – Brown butter is one of those cheffy things that sounds fancy.
But is actually really simple to make. And it tastes amazing. Even better than it sounds. All you need to do is cook some butter so the milk protein and sugar caramelise and go all biscuitty and nutty. That’s it.
I’ve used it here on a simple omelette for the ultimate luxe weeknight dinner. But it’s wonderful with any protein or veggies. Or if you don’t mind the carbs, potatoes.

THURSDAY
Lemon & Basil Roast Chicken – Please excuse the photo for this dish! It totally doesn’t do it justice. I hadn’t planned on including this recipe in my photo shoot. But it was just so good that I saved some to photograph so I could share the recipe sooner.
The idea here is roasting veggies, chicken and sliced lemon all at once so you get the most amazing moist golden chicken with lemony juices.
So good, Especially the roast lemon slices with caramelized edges. I could eat them all day.
+ Crusty bread and butter for the boys.
FRIDAY
One Pot Miso Salmon – My friend Aggie gave me the idea for this dish. Layering veggies and salmon in a pot and cook with a miso sauce so the salmon steams. It’s about as simple as dinner can get.
I love how the steamed fish and veggies feel so nourishing and wholesome. And with the miso juices, incredibly delicious. You’re welcome
I’ve kept it simple with just cabbage and mushrooms but you’re welcome to play around with different veg. And different fish for that matter. I’m keen to try it with frozen edamame in the slow cooker for a more summery vibe.
+ Rice or noodles for the boys.
SWEET TREAT
Little Chocolate Hazelnut Cheesecakes – These little chocolate ‘cheesecakes’ tick all those boxes and then some. They’re creamy, crunchy and there’s chocolate!
If you’re not huge on goats cheese, ricotta or another soft fresh cheese like cream cheese will work equally as well.
