Cauli ‘Sushi’ Bowls – Seriously, if you are any sort of fan of Japanese food, you *have* to try these bowls of goodness.
While cauliflower gives them a different texture to your usual rice, I actually prefer it because it’s lighter and less filling which means there is more stomach space for the most delicious parts – the fish and mayo and the seaweed.
I’ve just used canned red salmon here for ease, but if you want to take them to the next level some fresh sashimi salmon or tuna would be the business.
If you’re not familiar with Furikake – it’s a Japanese sprinkle with seaweed and white and black sesame seeds and a little salt. It really brings things to life and is worthy of a place in your pantry. You’ll find yourself sprinkling it over everything. It’s especially good with fish or eggs or broccoli or spinach.
But if you don’t have it, some sesame seeds and a good pinch of sea salt will work just as well.

TUESDAY
Magic Cabbage and Sausage Supper – If you love Cabbage and you love Sausages… then this Cabbage and Sausage magic meal is going to become your new best friend.
Cabbage is totally up there in my favourite vegetables list.
I love how it just hangs out in the fridge for weeks and week (and sometimes even months) waiting for me to cook it.
But the thing I really adore about cabbage is the texture. Especially when it’s roasted like this magic meal.
It cooks down into the most delicious comforting bowl of goodness. I’d take this cabbage over a bowl of pasta any day of the week (and any night too!).
+ Wraps or pita for my boys.

WEDNESDAY
Spinach Okonomiyaki – Okonomiyaki is often described as a Japanese Pancake usually made with cabbage and a flour based batter. In Japan there are restaurants that actually specialize in this savoury treat.
My humble spinach version makes no claims about replicating the original. So if you’re a purist, better skip ahead to the next recipe.
The idea is super simple, we use eggs, frozen spinach and sesame seeds to form the basis of our ‘pancake’. But rather than cook it in a pan, I prefer to set and forget in a hot oven.
Then it’s a matter of drizzling over some mayo and topping it with a savory sprinkle (or just more sesame seeds) and dinner (or lunch) is ready.

THURSDAY
Amazing Roast Broccoli & Chicken Caesar Bowls – Roast broccoli is one of my all time favourite things to eat. I’d take it over roast spuds any day (although the men in my house are firmly in the potato camp). It’s especially tasty when cooked in a hot oven like this because you get the lovely charred crispy bits on the outside. Plus its quicker to cook. So even if you’re not a Caesar fan, I really encourage you to try the broccoli!
+ Buttered pasta for the boys.

FRIDAY
Seared Tuna and Cherry Tomatoes – The inspiration for this dish was the wonderful southern French salad, Niçoise. The traditional salad is quite hearty, with tuna boiled potatoes, green beans, capers, anchovies, olives and boiled eggs. Way more than 5 ingredients. This is my minimalist version. You can serve the tuna as a whole steak or tear the cooked tuna into chunks, mix it with the tomato, capers and rocket and drizzle over some mayonnaise.
+ Potatoes for the boys.
SWEET TREAT
The Worlds Easiest Cheesecake – It’s in my enthusiastic nature to speak in hyperbole. But in the case of this cheesecake idea the hype is totally justified.
Seriously you get all the creamy cheesy goodness of a cheesecake WITHOUT having to mix or bake a single thing (unless you count roasting some almonds as baking).
I adore the combo of apricot jam and almonds because I have lots of nostalgia for apricot jam made with my Pops home grown apricots.
But as always you can play around with the nut and fruit combos. Think Strawberry & Macadamia, Raspberry & Hazelnut, Blackberry & Walnut. Maple Syrup & Pecan. Honey & Peanut.
