MONDAY
Sensational Savoury Yoghurt Bowls – There are so many flavours and textures. Crunch from the raw veg, freshness from the herbs, the deep savoriness from the protein and crunch from the nuts.
If you’re a yoghurt fan (like me) then I have a treat for you.
These Savoury Yoghurt Bowls have recently overtaken my Abundance Bowls as my favourite go-to lunch and dinner.
I just adore how the yoghurt brings everything together as a creamy tangy sauce.
TUESDAY
Chicken with Pine Nut Sauce – This pine nut sauce is a favourite of mine. It’s based on the Turkish nut sauce called ‘tarator’ which is usually made with walnuts.
To be honest I prefer this creamy pine nut version. It’s super lovely served with chicken and doubles up as a tasty dressing to have with the salad leaves.
WEDNESDAY
Lebanese Omelette with Almond ‘Hummus’ – Za’atar is a middle eastern spice blend containing sumac (a lemony flavoured spice), thyme, salt and sesame seeds. It’s traditionally sprinkled on flat bread but it also adds freshness and flavour to everything from vegetables to eggs to chicken to fish.
It’s a worthy addition to your spice collection.
But of course there are alternatives below if you happen to be ‘between-packets-of-za’atar’ at the moment.
THURSDAY
Super Simple Sang Choi Bau – One of my friends is from Texas. He is convinced that sang choi bau is the perfect food because you could live on it alone, if you had to. He does have a point. The combination of richly sauced meat with crunchy nuts wrapped in a crisp, refreshing lettuce-leaf parcel is hard to beat.
FRIDAY
3+ Ingredient Teriyaki Salmon – I’m so glad a bottle of Teriyaki sauce happened to find its way into my shopping cart about 6 months ago.
As a minimalist I’m hesitant to add single use ingredients to my pantry. But after my first night of Teriyaki bliss, I haven’t looked back.
As soon as my Teriyaki supplies get low, I immediately add it to my shopping list.
This extremely simple salmon dish is my Teriyaki of choice but chicken and tofu teriyaki come in equal second.
SWEET TREAT
A New Fruit + Cream– So this isn’t so much a recipe as a challenge for you to explore the amazing world of fruit. When you’re doing your shopping, choose something you haven’t had before and bring it home! You just might surprise yourself…
