MONDAY

The Ploughman’s Pie – I love how the almond crust transforms this baked eggs and cheese into something more decadent and pie-like. Although since it doesn’t have a lid I guess technically it’s a tart!

If you’re not familiar, a ploughman’s lunch is normally a plate of cheese, ham, mustard and pickles served with crusty bread.

Love using these hearty flavours in a more low carb-friendly way.

TUESDAY

Slow Cooker Chicken Curry (Dump and Go) – Imagine being greeted by amazing aromatics when you open your front door. It’s been a long day but now you have a deeply flavoured Slow Cooker Chicken Curry to enjoy.

You thank your past self for listening to Jules and getting this ‘dump and go’ meal ready.

Serve with Easy Egg Fried Rice.

Quick Smoky Beef & Aubergine – I hate to play favourites. But if someone were to force me to choose my favroutite spice, it would have to be Smoked Paprika.

I love how it adds so much smoky depth of flavour with the flick of a teaspoon-holding-wrist.

If you think it’s cheating to use a commercial eggplant dip instead of taking an hour to lovingly char an eggplant over a naked flame to make your own baba ganoush, I suspect it’s been a while since you tried a commercial dip. While they aren’t the same, there are some fantastic ones on the market and they have the added bonus of a long shelf life. So you can keep a tub in the fridge for a month or more and even longer in the freezer.

Fish with Olive Lemon Salsa – I can’t remember where I got the idea to dice the flesh of a lemon and use it in a sauce.

But I’m very glad I did.

Love how using an everyday ingredient like the humble lemon in a slightly different way makes it feel like a completely new ingredient!

The flavours in this salsa are big, bold and fresh so best suited to your more meaty fish steaks or oily fish like salmon. But it’s also amazing with pork chops or some good quality sausages. And of course you could always serve it with good old chicken.

Last-Minute Peanut Butter Mousse – You know those nights when you decide after dinner that you really need something else to eat? But you haven’t organized anything? Well, my friend, I’m going to share with you my favourite little last-minute indulgence.

Mostly it’s something I whip up for myself, but occasionally I share it with company and grandly call it my Peanut Butter Mousse. But it’s also great as a post-run snack.
