MONDAY

The Good Greens – Some of my favourite favourite meals involve a simple formula. Basically it’s a big bowl of veggies + a sauce + something really tasty.

The veggies can be warm or cold, depending on the weather so it’s super versatile.

I always have a stash of steamed veg in the fridge or freezer so I know there is always a ‘good bowl’ just around the corner.

Will make Easy Almond Pizza for my little carb lovers.

TUESDAY

15-Minute Goulash – I know what you’re thinking…

‘A real Hungarian goulash in 15 minutes? Impossible’.
And if you’re expecting a dish of soft slow cooked meat that’s been simmered for hours. You’re right. That ain’t going to happen in 15 minutes.

BUT if you’re in the mood for something that tastes deeply meaty and savoury with some sweetness from the peppers and the refreshing contrasting tang of sour cream AND you are short on time, you could do much worse than this humble approximation.

WEDNESDAY

Spinach & Feta Burgers – I love a good veggie burger. Especially when they contain actual vegetables like these.

This is one of those super versatile recipes that is excellent to have up your sleeve. Using frozen greens it’s basically a pantry recipe. But you can also cook the burgers ahead and have them stashed in your freezer ready to cook from frozen. Like I said, super versatile.

Spinach and Feta work so well together. The feta provides loads of flavour but also that satisfying texture so you feel like you’re getting a proper feed.

THURSDAY

Baked Salmon with Crunchy Nut Crust – Every time I bake fish in the oven like this, I am so happy I did.

It’s so easy.

Just pop some veg in a baking dish. Top with fish. Bake in a hot oven for about 10 minutes.

No need to keep a constant watch on your frying pan.

No fishy smells in the house afterwards.

Easy cleanup too.

The nut crust also deserves a mention. I love how it adds texture, flavour and substance to this simple supper. With minimal effort.

FRIDAY

Ugly Delicious Chicken & Cabbage – Ugly delicious. That’s what happens when you combine chicken and cabbage with the magical ingredient soy sauce.

At first glance this recipe doesn’t sound like it’s going to change your life.

But one taste is all it will take.

You’ll be congratulating yourself on your magical cooking skills.

And wishing you had more cabbage in the house.

SWEET TREAT

Heavenly Chocolate Olive Oil Cake – Heavenly doesn’t even really begin to describe it. We’re talking deeply chocolatey and incredibly moist and just sweet enough. But the best part is it’s insanely easy. No whisking egg whites. No melting chocolate. Just weight out everything into a bowl. Mix and bake.

It’s now my go-to cake for everything from afternoon tea to lunch boxes to big celebrational birthday cakes.
