Chickpea ‘Chilli’ – I love a good chilli con carne but sometimes a veggie chilli is what you need to hit the spot.
Traditionally chillies are made with black beans or red kidney beans but to be honest I prefer to break with tradition and use my favourite legumes. The humble chickpea!

TUESDAY
Chicken & Broccoli Stir Fry – This is one of my all-time favourite stir frys. I just love how the chicken, broccoli and cashews come together to make a super tasty meal in a bowl.

WEDNESDAY
Plan-B Spinach & Eggs – Last minute plan changes happen. So it pays to be prepared and have a plan-B recipe at the ready that is a) incredibly low effort b) delicious c) satisfying.
These green eggs tick all the boxes.
I always have eggs in the house (because chickens). But even before my poultry fancier days, I always had eggs. Side note – they keep for much longer than the best before dates.
And I always have spinach in the freezer.
So it’s a wonder it took me until recently to combine the two into a brilliant little easy lunch, dinner – or breakfast for that matter.

THURSDAY
Spiced Beef with Hummus -This is one of my all time favourite ways to use minced (ground) beef without any tomato products. It’s based on a Lebanese dish and is great with lamb as well.
Baharat is a wonderful Lebanese spice blend containing 7 different spices. It adds a gorgeous fragrance but if you can’t find it, see below for an easy alternative home made spice blend or just substitute ground cumin.

FRIDAY
Frozen Veg Oven Supper with Curry Mayo – Two words. Curry. Mayonnaise.
One of those alchemical combinations that creates something even more delicious than one would expect from the sum of the parts.
I wish I could claim this as my own idea but it was from the brilliant mind of my beautiful friend Lara Day.
This is one best friend who should come with a warning – it’s so good you’ll be wanting to marry it. Trust me you won’t want to make anything else.
Of course you can use fresh fish and veggie rice (just see variations for cooking times)

SWEET TREAT
Creamy Not-Rice Pudding – I love, love, love this idea as a simple dessert.
Basically plonk cottage cheese in a bowl then top with some sort of fruit and some sort of nuts. And it has all the creamy goodness of rice pudding – with that nubbly texture.
So many possibilities.
