Magic Meal Plan: WEEK 13

MONDAY

Japanese Scrambled Eggs – If you don’t usually think to make scrambled eggs for dinner, these Japanese Scrambled Eggs (aka Miso Eggs) are about to revolutionize your world.

They’re creamy and comforting without containing any dairy. But more importantly they pack the biggest flavour punch. It all comes down to my secret magic ingredient. Ready to find out what it is?

Good old miso paste.

TUESDAY

Cabbage ‘Chow Mein’ I have to confess I don’t know if I’ve ever really had Chinese Chow Mein. So this dish is more of an idea from my head rather than an attempt to simplify a classic dish that I know and love.

Anyway in my imaginary world (with my imaginary ‘friends’), Chow Mein is some sort of noodle dish with some veggies thrown in.

I used to love noodles but these days I much prefer to have a big bowl of cabbage rather than some carby stodge.
Which is where the idea for this dish came from. What if I used a bag of pre-chopped coleslaw mix and used it instead of noodles. Lets just say you *have* to try this.

WEDNESDAY

Chilli Chicken with Tahini Sauce – I may be more than slightly obsessed with tahini. It’s just so delicious.
Especially when used as a creamy balance to a spicy tomato sauce like in this simple chicken dish.

And while I adore this chicken version, it’s equally amazing with salmon or other fish, chickpeas or eggplant.

THURSDAY

Fast Roast Tandoori Salmon – I’ve completely changed my tune about cauliflower rice.

I used to think it was more effort than it was worth. But ever since I discovered frozen cauliflower rice in my supermarket, new ideas keep popping into my head.

Like this simple Indian-inspired tray bake.

Love how you just plonk everything in the oven and set a timer and then dinner is ready with practically no effort.

FRIDAY

Easiest Baked Bolognese – This is my go-to bolognese. It doesn’t quite have the same depth of flavour as my Irishman’s 2-day ragu, but between you and me, it’s pretty close.

I make a big batch about once a month and freeze in jars ready for quick meals for my boys when my Irishman and I are having something more adult.

SWEET TREAT

Everyday Almond Pancakes – After making literally hundreds of pancakes I’ve found this blend of almond meal and regular flour is the perfect balance between health and taste.

But if you want a lower carb option you can use 100% almond meal. Just be prepared for them to be a little more fragile.
