Super Tender Broccoli – I love this broccoli with a poached egg and some home made mayo for breakkie. But lately, I’ve found myself doubling up for more super tender ‘broc’ with sardines or tuna and lashings of lemon juice for lunch or a simple supper.

TUESDAY
Green Chicken Bowls with Pinenut Mayo – Pinenut Mayo one of those simple ideas that really surprises with just how delicious the combination of 2 little ingredients can be.
It’s my go-to when the first asparagus of Spring makes its way into my kitchen. But there’s no need to limit it to one season.
It really breathes life into this simple bowl of poached chicken and green veg.

WEDNESDAY
A Cheesy Omelette – It’s hard to go past an omelette when you feel like a super quick, healthy meal. The possibilities are endless when it comes to additions and flavours but my favourite combo is ricotta and Parmesan.

THURSDAY
3+ Ingredient Teriyaki Salmon – This extremely simple salmon dish is my Teriyaki of choice but chicken and tofu teriyaki come in equal second.
I’ve just had the brilliant idea to use the sauce on roast vegetables.
Teriyaki carrots. Teriyaki roast cauliflower. Teriyaki ?cabbage wedges?. Endless possibilities.
If you’re not a salmon fan – definitely try this with chicken thigh fillets or diced firm tofu.

FRIDAY
Beautiful Burrito Bowls – Is this the same as wrestling with a traditional burrito the size of your head? Definitely not.
But will these beautiful bowls keep your taste buds and your tummy happy without a dreaded burrito hangover? Absolutely!
This may seem too simple to be any good but don’t underestimate the power of a little salt and ground cumin to radically transform your everyday minced (ground) beef.

SWEET TREAT
Quick Raspberry Yoghurt Mousse – You know those days when you’re in the mood for ‘something sweet’ but don’t feel like turning on the oven, or waiting very long? Then that’s when you need a quick, light dessert ‘treat’ like these little mousses!
I love the tartness of yoghurt but you could always use whipped cream (or a combo of both) if you prefer a creamier treat.
