Magic Meal Plan Week 22

MONDAY

Grilled Cheese Tofu – After years of buying into the fear-mongering around soy, I decided to experiment with tofu again because it’s such a convenient form of protein.

I love how it will happily sit in the fridge for months. I love how nutritionally it counts as both protein and vegetable.

And I LOVE how it’s blandness makes it the perfect accompaniment for strong flavours like with this miso or vegemite.

TUESDAY

Tandoori Cauliflower – While the most famous tandoori dishes like tandoori chicken centre around animal protein, I recently had the most delicious tandoori carrots at a local restaurant.

Which got me thinking of the possibilities of tandoori flavours and vegetables.

WEDNESDAY

Walnut + Brown Butter Omelette – Brown butter is one of those cheffy things that sounds fancy.
But is actually really simple to make.

And it tastes amazing. Even better than it sounds.

All you need to do is cook some butter so the milk protein and sugar caramelise and go all biscuitty and nutty.

That’s it.

THURSDAY

Fish Steaks with Olive Tapenade – While I adore swordfish, I try to eat it only every now and then because it tends to have high levels of mercury. Tuna or marlin steaks would work here, as would salmon cutlets. Halibut would be a good northern hemisphere choice.

Olive tapenade may seem like a strange accompaniment to fish, but it is delicious with the more robust, meaty fish steaks.

FRIDAY

Beaut Beef & Blue Cheese – I’ll let you in on a secret…

Most of my best ideas happen when I’m in the kitchen, looking in the fridge, trying to think of what to cook.

And that’s exactly how this speedy little number was conceived.

I had mince (ground beef).

I always have mince.

I had some Stilton which needed using up.

And I had rocket and chives in the garden.

Add in my soft spot for alliteration…

You beaut! (As any self-respecting Australian would say).

But just in case you’re not familiar with Aussie slang…’Beaut’ is short for beautiful. And is usually used to describe any highly positive situation.

Such as when one creates a very easy and delicious dinner.

SWEET TREAT

Little Chocolate Hazelnut Cheesecakes – Often on a Saturday night, when my Irishman and I are having our ‘movie night’, we get the urge for ‘something sweet’ after dinner. Generally I don’t have anything planned so need to come up with something quick and diabetic-friendly at the last minute.

These little chocolate ‘cheesecakes’ tick all those boxes and then some. They’re creamy, crunchy and there’s chocolate!
