Magic Meal Plans Week 28

NOTE: Don’t feel like you’re supposed to make all these recipes.
Choose just one to experiment with each week.

MONDAY

Broccoli al Limone – Over the Summer I was reading Emiko Davis’ beautiful book ‘Aquacotta – Recipes of Tuscany’s Secret Silver Coast’.

Her ‘Spaghetti al Limone’ really captured my imagination.

Not because I’m that into pasta any more.

But the idea of a fresh zesty, creamy cheesey sauce?

Now that sounded amazing.

So of course I had to try it with broccoli.

TUESDAY

Cabbage ‘Chow Mein’ – I used to love noodles but these days I much prefer to have a big bowl of cabbage rather than some carby stodge.

Which is where the idea for this dish came from. What if I used a bag of pre-chopped coleslaw mix and used it instead of noodles. Lets just say you *have* to try this.

The cabbage and carrot cook down into a perfect soft ‘noodle’ consistency deeply flavoured from the oyster sauce. You’ll wish you’d bought an extra bag of cabbage!

WEDNESDAY

Tofu Not-Pizza Credit where credit is due. The idea for this came from Dhanya, the daughter of one of the founding members of my Naturally Healthy Club coaching group.

I’ll let Supraja (Dhanya’s Mum) tell you about it…

“This (Grilled Cheese Tofu) has to be the most brilliant recipe I have seen in recent times. My daughter watched the video with me and insisted we try it. She also suggested another version with pizza sauce and mozzarella. We tried both and loved it. Only problem – I made two servings and there were the four of us so there was a bit of fighting in the house”

THURSDAY

Lemon & Za’atar Chicken – OK so if you haven’t heard of Za’atar before then a) I’m impressed you’re reading this recipe. And b) you are in for a treat!

Za’atar is a Middle Eastern herb and spice blend that’s traditionally eaten with olive oil and flat bread.

The major flavours are herby (from the herbs!) and lemony from the sumac. There’s also nuttiness from the sesame seeds.

It’s absolutely delicious especially when teamed here with roast chicken and lemon. But I also adore it with eggs, cauliflower and broccoli.

FRIDAY

Fast Roast Fish with Miso Mayo – At the risk of giving away all my secrets, the idea for the Miso Mayonnaise actually came from the packet of my miso paste. As soon as i saw it, I just had to try it.

I possibly should post a warning with this recipe. The mayo is so good as to be addictive. However at least it’s legal. And relatively inexpensive. There are worse things one could be addicted to.

SWEET TREAT

Heavenly Chocolate Olive Oil Cake – Heavenly doesn’t even really begin to describe it. We’re talking deeply chocolatey and incredibly moist and just sweet enough. But the best part is it’s insanely easy. No whisking egg whites. No melting chocolate. Just weight out everything into a bowl. Mix and bake.
