Magic Meal Plan Week 30

NOTE: Don’t feel like you’re supposed to make all these recipes.
Choose just one to experiment with each week.

MONDAY

Mexican Tofu Magic Meal – One of my best food decisions in recent times has been to start eating tofu again. It’s so fun to have a new super convenient protein option in the mix. Case in point this Mexican Tofu Magic Meal.

Just dice some firm tofu – toss through a little Tajin seasoning (flavour explosion blend of dried lime juice, chilli powder and salt) and you have a seriously delicious protein.

Then the only thing to complete the meal is add some veggies and a drizzle of a tasty sauce like say, sour cream.

And your magic meal is ready before you’ve even had time to think.

TUESDAY

Chicken & Cashew Nut Stir Fry – This is one of my all-time favourite stir frys. I just love how the chicken, broccoli and cashews come together to make a super tasty meal in a bowl.

WEDNESDAY

Plan-B Spinach & Eggs – Last minute plan changes happen. So it pays to be prepared and have a plan-B recipe at the ready that is a) incredibly low effort b) delicious c) satisfying.

These green eggs tick all the boxes.

THURSDAY

Lamb Fillet with Mint and Hummus – I think my favourite way to eat hummus is like this, with tender meaty lamb fillet and some fresh mint. You can get pretty good hummus from the supermarket, but if you feel like making your own, puree together a can of chickpeas with a clove of garlic and 3 tablespoons each of lemon juice, tahini and liquid from the chickpeas can. Too easy.

FRIDAY

‘Plan-B’ Green Bean Nicoise Bowls – We have the marvelous Mark – long term and prolific Simple Meal Plans member to thank for this idea.

I still have some residual childhood issues around frozen beans. But at Marks suggestion that freezing technology has significantly improved over the last few decades (am I really that old?) I decided to risk it.

The results were nothing short of astonishing.

Rather than boiling like my mother used to, I just popped the frozen beans in a pot with the lid on over high heat so they charred a little and defrosted, all in a couple of minutes.

SWEET TREAT

Creamy Not-Rice Pudding – I love, love, love this idea as a simple dessert.

Basically plonk cottage cheese in a bowl then top with some sort of fruit and some sort of nuts. And it has all the creamy goodness of rice pudding – with that nubbly texture.

So many possibilities.
