MONDAY
Addictive Peanut Tofu Scramble – If you’re a peanut butter fan (like me) you are going to LOVE this incredibly simple meal. It comes together in minutes but there’s so much going on with the peanutty goodness and the heat from the sriracha you’ll feel like you’ve gotten an excellent return on your time investment.

TUESDAY
Kofta Kebabs – Cooking food on skewers is a brilliant way to make smaller ‘bits and pieces’ feel like something more substantial. Lamb is the traditional meat used for kofta but beef or chicken will be just as delicious.

WEDNESDAY
Gorgeous Greens Tart – This is seriously my new favourite thing to make when I’m having a friend over for lunch.
It’s super quick and looks impressive.
And tastes like you’ve gone to the trouble of making pastry for a tart.
Which of course you haven’t.
Plus it’s Low Carb. So a winner all round!

THURSDAY
Plan-B Dry Curry – Ever heard of a dry curry? Me neither until one my my coaching clients Julia posted a photo in our group.
I was immediately intrigued and decided to play around with my own version. Talk about a brilliant dinner to have in your back pocket. So packed with flavour and yet so quick and easy to prepare.

FRIDAY
Crispy Fish with Tahini Yoghurt & Walnut Herb Salad – This is my idea of the perfect midweek dinner… It’s fast, it’s fresh, it’s tasty. And with the tahini, fish and walnuts, it’s super satisfying without weighing you down. Did I mention it’s tasty?
I love this mix of tahini and yoghurt as a sauce / base to serve with different types of protein. It’s just as delicious as hummus but with a fraction of the carbs. Tahini is a paste made from ground sesame seeds. It can be tricky to track down but my supermarket and health food store stock it. If you can’t find tahini see the ‘variations’ below for alternatives.

SWEET TREAT
Cheese & Pear ‘Crackers’ – The idea of using sliced pear (I like them still a little crunchy) with cheese works equally well as a little after dinner treat. So I thought I’d write up a recipe to use as the dessert option occasionally in my weekly Simple Meal Plans.
And crisp apples are great here as well.
