Magic Meal Plan – Week 34

NOTE: Don’t feel like you’re supposed to make all these recipes. Choose just one to experiment with each week.

MONDAY

Darya’s Egg Fried Cabbage – OMG! This is one of my favourite things to eat at the moment. It’s such as simple dinner but so satisfying and delicious. And one of those versatile recipes that is equally good for breakfast, lunch OR dinner.

I’d take a big bowl of this cabbage over pasta any day.

TUESDAY

Chicken Satay Curry – Normally satay is a peanut based spicy sauce served alongside grilled meat and veg. It’s super delicious but I often miss having a curry sauce. So this version, while not exactly authentic, it does give you spicy pea nutty goodness with loads of sauce! To turn this into a pantry recipe, use frozen spinach or broccoli as the greens.

Pesto Baked Eggs – Skeptical about how easy and how tasty a healthy 3-ingredient meal can be? Well this little combo of pesto, frozen spinach and eggs might just blow your mind. Seriously these Pesto Baked Eggs are so good.

You’ll have no excuses for having cereal for dinner when you have this little number in your repertoire. Unless of course you love having cereal or toast for dinner (in which case save these eggs for breakfast or lunch!).

THURSDAY

Quick Smoky Beef & Aubergine – I hate to play favourites. But if someone were to force me to choose my favroutite spice, it would have to be Smoked Paprika.

I love how it adds so much smoky depth of flavour with the flick of a teaspoon-holding-wrist.

If you think it’s cheating to use a commercial eggplant dip instead of taking an hour to lovingly char an eggplant over a naked flame to make your own baba ganoush, I suspect it’s been a while since you tried a commercial dip. While they aren’t the same, there are some fantastic ones on the market and they have the added bonus of a long shelf life. So you can keep a tub in the fridge for a month or more and even longer in the freezer.

FRIDAY

3+ Ingredient Teriyaki Salmon – I’m so glad a bottle of Teriyaki sauce happened to find its way into my shopping cart about 6 months ago.

As a minimalist I’m hesitant to add single use ingredients to my pantry. But after my first night of Teriyaki bliss, I haven’t looked back.

As soon as my Teriyaki supplies get low, I immediately add it to my shopping list.

This extremely simple salmon dish is my Teriyaki of choice but chicken and tofu teriyaki come in equal second.

SWEET TREAT

Creamy Chocolate Hazelnut Pudding – This recipe should come with a warning! Because it’s so incredibly quick and easy BUT (and here’s the dangerous part) luxuriously delicious. Yes this 2-Ingredient Creamy Chocolate Hazelnut Pudding is that good.

And all the effort you need is to stir together some creamy smooth ricotta from a tub with everyone’s favourite choc hazelnut spread.

Get ready for a luxurious dessert experience!
