MONDAY
Halloumi + Cabbage Hash – OK so full credit. This idea for this delicious combo came from David at Green Kitchen Stories.
He posted his version on Instagram, I made an instant mental note to create my own more simple recipe.
So glad I did.
My Irishman and I couldn’t get enough of it when we had it for brunch one Sunday.
But it’s equally fab as a quick mid-week dinner.

TUESDAY
Green Curry Stir Fry – The idea for using Thai green curry paste as a sauce to season a stir fry came from my favourite food writer, Nigel Slater. To be honest I wasn’t sure it would be very good but as usual when I trust St. Nigel everything turns out much more delicious that expected.

WEDNESDAY
Hearty Walnut, Kale & Goats Cheese Frittata – I love a good frittata at any time. But this one with walnuts and kale is especially substantial and fab for a meat-free dinner where you won’t be missing the meat (my Irishman didn’t). It’s also good for lunches the next day.
And I love that it’s a complete meal on its own. No need to add a sauce or side salad.

THURSDAY
Summer Meatballs – I don’t know about you but I tend to think of meatballs as a wintery type dish. But they can be given a summery makeover. All it takes is a super fresh lemony sauce and serving on a bed of baby spinach instead of the more usual, hearty meatball accompaniments.

FRIDAY
Fish with Olive Lemon Salsa – I can’t remember where I got the idea to dice the flesh of a lemon and use it in a sauce.
But I’m very glad I did.
Love how using an everyday ingredient like the humble lemon in a slightly different way makes it feel like a completely new ingredient!

SWEET TREAT
No-Bake Chocolate Cherry ‘Cake’ – Back to the glories of this cake. It’s an awesome stress-free dinner party show-stopper because you can make it ahead.
It’s super rich so serve dainty slices… You can always go back for seconds!
