MONDAY
Chickpea ‘Chilli’ – I love a good chilli con carne but sometimes a veggie chilli is what you need to hit the spot.
Traditionally chillies are made with black beans or red kidney beans but to be honest I prefer to break with tradition and use my favourite legumes. The humble chickpea!

TUESDAY
Chicken & Brocolli Stir Fry – This is one of my all-time favourite stir frys. I just love how the chicken, broccoli and cashews come together to make a super tasty meal in a bowl.

WEDNESDAY
Persian ‘Flavour Explosion’ Eggs – OMG so be prepared for a treat! These sweet and salty ‘Persian’ scrambled eggs truly live up to their name. Talk about a flavour bomb.
I wish I could take credit for the brilliant idea to combine dates, feta and eggs but it was the lovely ?Diana Henry? in her gorgeous book ‘Simple’ who is the brains behind this genius.

THURSDAY
Beaut Beef & Blue Cheese – I’ll let you in on a secret…
Most of my best ideas happen when I’m in the kitchen, looking in the fridge, trying to think of what to cook.
And that’s exactly how this speedy little number was conceived.
I had mince (ground beef).
I always have mince.
I had some Stilton which needed using up.
And I had rocket and chives in the garden.
Add in my soft spot for alliteration…
You beaut! (As any self-respecting Australian would say).

FRIDAY
‘Plan-B’ Green Bean Nicoise Bowls – We have the marvelous Mark – long term and prolific Simple Meal Plans member to thank for this idea.
He mentioned using frozen beans, canned tuna and olives in his ‘pantry’ version of my Seared Tuna with Cherry Tomatoes.
I still have some residual childhood issues around frozen beans. But at Marks suggestion that freezing technology has significantly improved over the last few decades (am I really that old?) I decided to risk it.
The results were nothing short of astonishing.

SWEET TREAT
Creamy Not-Rice Pudding – I love, love, love this idea as a simple dessert.
Basically plonk cottage cheese in a bowl then top with some sort of fruit and some sort of nuts. And it has all the creamy goodness of rice pudding – with that nubbly texture.
So many possibilities.
