MONDAY

One Pot Cauliflower, Chicken & Peanut Curry

It’s hard to go past a good curry for a quick filling weeknight dinner. For years I thought you needed loads of spices and ingredients to make an authentic tasting curry, until I challenged myself to make a super simple curry using only curry powder.

Since then I haven’t looked back.

TUESDAY

Taco Tuesday Bowls

I first made these taco bowls with some leftover pulled pork that was amazing. However I’m just as happy with this simple weeknight option. Although it does all depend on the quality of your hot sauce.

My favourite is a smoky chipotle that has a bit of sweetness but you could go for tabasco or even sriracha. Just add a little at a time. It’s easy to add more heat but difficult to subtract!

WEDNESDAY

Lemony Easy Eggs

There’s something about creamy things and lemon that is just soo soo delicious.

So after getting excited about my ?Lovely Lemony Ragu?, took like 2 seconds for the brain-wave to try it in my totally inauthentic cauliflower rice ‘not-risotto’.

It’s so good it’s making me hungry just thinking about it.

I call it ‘easy eggs’ but basically it’s scrambled eggs with cauliflower rice in it. Easy eggs sounds much nicer don’t you think?

THURSDAY

Creamy Mushroom, Beef & Almond Pies

Surely there was a way to make a pie that would be just as delicious and comforting without all the carbs.

Or the effort that goes with making pastry. And my friend, there is!

By using a combo of almond meal and flaked almonds you get a pot pie that ticks all the boxes. Especially the minimal effort one.

FRIDAY

Salmon, Pea & Prosciutto Oven Supper

Have you ever got to the end of a long day and wished that dinner would just cook itself?
Me too.

And while I haven’t been able to create a robot that could do that for me, I do know the next best thing.

It’s called the Oven Supper and here’s the idea…

Put some protein and veggies on a baking tray.Pop it in the oven and set your timer.Take some precious time to do something nice for yourself.When the timer goes, sit down and eat.

Seriously dinner CAN be this simple. And delicious.
