Green Chicken Bowls with Pine Nut Mayo
Recently I rekindled an old love…
Pine Nut Mayonnaise.
The original idea came from one of my favourite Sydney chef’s Matt Moran of Sean’s Panaroma in Bondi Beach.
I can’t believe I forgot about it for years and years. But luckily I have a food blog to remind me!
It’s one of those simple ideas that really surprises with just how delicious the combination of 2 little ingredients can be.

TUESDAY
Beautiful Burrito Bowls
Is this the same as wrestling with a traditional burrito the size of your head? Definitely not.
But will these beautiful bowls keep your taste buds and your tummy happy without a dreaded burrito hangover? Absolutely!
This may seem too simple to be any good but don’t underestimate the power of a little salt and ground cumin to radically transform your everyday minced (ground) beef.

Super Tender Broccoli
I love this broccoli with a poached egg and some home made mayo for breakkie. But lately, I’ve found myself doubling up for more super tender ‘broc’ with sardines or tuna and lashings of lemon juice for lunch or a simple supper.

THURSDAY
Zucchini Laksa
Laksa is the most delicious noodle soup that hails from Malaysia. It’s fragrant, it’s rich, it’s spicy. Plus there are noodles to slurp! Since focusing on eating grain-free and low carb, however, laksa has been off the menu at our place. But not any longer!
I was so excited when I had the idea to use some zucchini ‘noodles’ instead of the usual wheat or rice based laska noodles. It’s really that good!

FRIDAY
Meat ‘Diamonds’
These meat ‘diamonds’ sound much nicer than meat ‘squares’ don’t you think?
My mum would definitely approve given she was of the school of thought that small lumps of highly compressed carbon were a girl’s best friend’.
I should also give David Tannis credit for the idea of using the onions and pine nuts as a sauce.
Simple and a nice change from the knee-jerk meatball accompaniment of tomato based sauce.

SWEET TREAT
Quick Raspberry Yoghurt Mousse
You know those days when you’re in the mood for ‘something sweet’ but don’t feel like turning on the oven, or waiting very long?
Then that’s when you need a quick, light dessert ‘treat’ like these little mousses! I love the tartness of yoghurt but you could always use whipped cream (or a combo of both) if you prefer a creamier treat.
