MONDAY

Tandoori Cauliflower

While the most famous tandoori dishes like tandoori chicken centre around animal protein, I recently had the most delicious tandoori carrots at a local restaurant.

Which got me thinking of the possibilities of tandoori flavours and vegetables.

Hello cauliflower!

TUESDAY

Grilled Cheese Tofu

My first attempts at this grilled tofu weren’t anything to write home about. Then I realized tofu doesn’t have any salt. OF COURSE, it’s incredibly bland.

So I added salt. Immediately things improved.

Then it was only a short step to miso paste or vegemite. Winner on both accounts!

This cheesy version is pretty hard to go past. But there are so many other possibilities for the old tofu-as-toast-switcheroo.

Which is why I always have a packet of firm tofu in the fridge now.

WEDNESDAY

Walnut + Brown Butter Omelette

Brown butter is one of those cheffy things that sounds fancy.

But is actually really simple to make.

And it tastes amazing. Even better than it sounds.

All you need to do is cook some butter so the milk protein and sugar caramelise and go all biscuitty and nutty.
That’s it.

I’ve used it here on a simple omelette for the ultimate luxe weeknight dinner.

THURSDAY

Lemon & Basil Roast Chicken

The idea here is roasting veggies, chicken and sliced lemon all at once so you get the most amazing moist golden chicken with lemony juices.

So good, Especially the roast lemon slices with caramelized edges. I could eat them all day.

FRIDAY

One Pot Miso Salmon

Layering veggies and salmon in a pot and cook with a miso sauce so the salmon steams. It’s about as simple as dinner can get.

I love how the steamed fish and veggies feel so nourishing and wholesome.

And with the miso juices, incredibly delicious. You’re welcome!

SWEET TREAT

Little Chocolate Hazelnut Cheesecakes

Often on a Saturday night, when my Irishman and I are having our ‘movie night’, we get the urge for ‘something sweet’ after dinner.

Generally I don’t have anything planned so need to come up with something quick and diabetic-friendly at the last minute.

These little chocolate ‘cheesecakes’ tick all those boxes and then some. They’re creamy, crunchy and there’s chocolate!

  • The flavor of Tandoori Fish always blows me away. The spices sink so deeply into the fish that every bite has this warm, smoky heat that feels incredibly comforting.
