MONDAY

3+ Ingredient Magic Chickpea Salad

The first time I made this chickpea salad it was a revelation.

I couldn’t believe that just opening a can of chickpeas and combining it with lemon juice and Parmesan cheese could be sooo delicious.

I instantly wanted to make it again for dinner that night.

Which is always a good sign.

Seriously healthy meals don’t get much easier than this.

TUESDAY

Minute Steaks with Smashed Olives & Goats Cheese

Minute steaks are now my go-to way to cook steak because
(a) they’re super quick to cook and
(b) they’re always super tender.

I love the combo of goats cheese and olives to add an instant salty, flavour boost to our steaks. And the way they combine with the olive oil and steak juices to make an instant sauce is a winner!

WEDNESDAY

Addictive Peanut Tofu Scramble

If you’re a peanut butter fan (like me) you are going to LOVE this incredibly simple meal. It comes together in minutes but there’s so much going on with the peanutty goodness and the heat from the sriracha you’ll feel like you’ve gotten an excellent return on your time investment.

The tofu does what tofu does best – provide a comforting canvas for the other ferocious flavours to play out on.

Cheesy Chicken

The first time I made this I just piled everything into a baking dish. Popped it in the oven and set the timer so dinner cooked itself while the boys and I went for a walk to the dam.

So easy!

FRIDAY

Easiest Baked Bolognese

This is my go-to bolognese. It doesn’t quite have the same depth of flavour as my Irishman’s 2-day ragu, but between you and me, it’s pretty close.

I make a big batch about once a month and freeze in jars ready for quick meals for my boys when my Irishman and I are having something more adult.
