MONDAY

Darya’s Egg Fried Cabbage

OMG! This is one of my favourite things to eat at the moment. It’s such as simple dinner but so satisfying and delicious. And one of those versatile recipes that is equally good for breakfast, lunch OR dinner.

I’d take a big bowl of this cabbage over pasta any day.

TUESDAY

Doreen’s Jalapeno Chicken

Don’t be fooled. This seems like such a simple idea BUT it’s way more than the sum of its parts.

As soon as Doreen (one of my Naturally Healthy Club clients) mentioned this dish as one of her favourites – it immediately went on my list of ‘ideas to try’.

It’s just chicken, pickled jalapenos, sour cream and some salad leaves (or shaved cabbage as I’ve used here). Talk about a flavour explosion.

Curried Tofu Scramble

This is a great dish for convincing non-tofu fans that tofu can be delicious. As Heidi says, she’s given up on trying to convince with argument and just slides a plate of this dish in front of her carnivore friends. Few are able to resist the urge to try it!

This is one of my all time favourite simple suppers inspired by my favourite food writer Nigel Slater.

My Irishman loves to so much that he made it 4 nights in a row when I was in New York.

Steve’s Quick Pasta Supper

For me these days pasta is a special occasion only affair. So I love to treat myself and my guests to a little pasta supper.

This sausage ragu is always a crowd pleaser. Everyone will think you’ve had this simmering on the stove for hours, thanks for our secret ingredient – the butter.

SWEET TREAT

Super Simple Chocolate Mousse

I love this straight from the fridge when it’s more firm and icecreamy but my guests all agreed it was more light and moussy when it had allowed to warm up a little. So probably best to remove from the fridge an hour or so before you are ready to serve. The other option is to make it and serve straight away.
