MONDAY

Lime & Tahini Kale Salad

When I first made this Lime & Tahini Kale Salad I was completely obsessed.

I think I had it three times in one week.

I adore how the lime and tahini come together to make a super flavoursome dressing.

TUESDAY

15-Minute Goulash

I love ground (minced) meat because it’s inexpensive but more importantly it cooks quickly AND all the surface area from the meat being cut so finely means that the flavour permeates your dish much more rapidly than bigger chunks of meat.

Oh and just between you and me…

While the paprika and peppers are essential for making this feel like a goulash, it’s the Worcestershire sauce which magically adds the depth of flavour you’d expect from a much longer cooking time.

WEDNESDAY

Spinach & Feta Burgers

This is one of those super versatile recipes that is excellent to have up your sleeve. Using frozen greens it’s basically a pantry recipe. But you can also cook the burgers ahead and have them stashed in your freezer ready to cook from frozen. Like I said, super versatile.

Spinach and Feta work so well together. The feta provides loads of flavour but also that satisfying texture so you feel like you’re getting a proper feed.

THURSDAY

Baked Salmon with Crunchy Nut Crust

Every time I bake fish in the oven like this, I am so happy I did.

It’s so easy.

Just pop some veg in a baking dish. Top with fish. Bake in a hot oven for about 10 minutes.

No need to keep a constant watch on your frying pan.

No fishy smells in the house afterwards.

Easy cleanup too.

Ugly Delicious Chicken and Cabbage

Ugly delicious. That’s what happens when you combine chicken and cabbage with the magical ingredient soy sauce.

At first glance this recipe doesn’t sound like it’s going to change your life.

But one taste is all it will take.

You’ll be congratulating yourself on your magical cooking skills.

And wishing you had more cabbage in the house.

Berries + Cream

It’s funny, since going Low Carb to manage my diabetes, one of my favourite Saturday night treats is a bowl of berries smothered in the richest double cream. Soo soo delicious.
