5 Healthy 5-Ingredient Dinners: Week 8

MONDAY

The Good Greens

Some of my favourite favourite meals involve a simple formula. Basically it’s a big bowl of veggies + a sauce + something really tasty.

This combo of salty feta, briny olives and pesto is one I first played around with in a frittata.

But I like the ‘ginormous’ flavours even more in this free form bowl.

TUESDAY

Chicken & Green Bean Stir Fry

This Chicken & Green Bean Stir Fry using frozen veg is my latest crush.

It comes with a warning though..

Make sure you buy frozen BABY green beans.

There are a lot of bad frozen beans on the market. And I’d hate for you to have a bad bean experience. So get the baby beans.
And my other magic trick – cook the beans straight from frozen – it save you from mediocre mushy bean texture.

Trust me.

You’ll be surprised that frozen green beans can actually be pretty good.

WEDNESDAY

Green Shakshuka

I love the ?original Shakshuka? – a Tunisian baked egg dish with red peppers, tomato and fiery harissa. This green version was inspired by one of my favourite cafes and it’s just as delicious in a more calming way.

Frozen spinach is a surprisingly tasty and not-so-surprisingly convenient ingredient. After frozen peas, it’s my go-to ’emergency’ frozen vegetable. I’ve also made this with fresh kale and it was equally as good but much more work!

Fish ‘Tacos’ with Easy Coriander Hot Sauce

I’m calling these ‘tacos’ because I’ve used lettuce leaves instead of tortillas. But don’t let that put you off.

They’re super delicious and with the fresh zesty hot sauce your taste buds will be happy!

If you’re using the lettuce leaves it’s a pretty light meal. So see the more substantial options below if you’re feeling hungry.

FRIDAY

Fast Friday Cheeseburger Bowls

These burger bowls are a big big favourite in our house on a Friday night.

I love them because they’re so quick and it all just cooks in one pan – so minimal cleanup.

My Irishman loves the combo of the meaty beef and the buttery roast zucchini.

And the boys love them because I serve theirs in soft butter brioche burger buns. #everyonehappy

SWEET TREAT

Heavenly Chocolate Olive Oil Cake

Heavenly doesn’t even really begin to describe it. We’re talking deeply chocolatey and incredibly moist and just sweet enough. But the best part is it’s insanely easy. No whisking egg whites. No melting chocolate. Just weight out everything into a bowl. Mix and bake.

It’s now my go-to cake for everything from afternoon tea to lunch boxes (see the nut-free variation) to big celebrational birthday cakes.
