5 Healthy 5-Ingredient Dinners: Week 14

NOTE: Don’t feel like you’re supposed to make all these recipes. Choose just one to experiment with each week.

MONDAY

Mushroom, Sausage + Feta Hash

This is one of those fab little one pot meals that is equally welcome on an ordinary Wednesday night as it is for Sunday bunch.

So much flavour!

The cumin seeds add beautiful depth. The dill is my preference for herb because it adds an unusual fresh top notes. Just the thing to contrast earthy mushrooms and meaty sausages.

There’s balsamic which brings sweetness and acid brightness.

TUESDAY

Lovely Lemon Ragu

My boys love a good old bolognese so I’m always thinking of ways to freshen it up so we aren’t getting bored.

This lemony version was a suprise winner. I was totally expecting it to be rejected. But happily the power of spaghetti was enough to overcome any resistance to new things.

WEDNESDAY

Japanese Omelette with Miso Mayo

Omelettes are one of my favourite, favourite simple weeknight dinners. They’re so quick. And satisfying.

And endless possibilities for flavour.

Recently this Japanese-inspired omelette has been on high rotation in our house. I love how the soy sauce and onion give beautiful depth of flavour to elevate the simple eggs into something sublime.

THURSDAY

Cauli Rice Not-Paella

This combo of red peppers, tomato and paprika to flavour the cauliflower and prawns is so so delicious. Like me, you’ll be conspiring to find ways to make it again asap.

Frozen prawns are a new ingredient for me and they’re a super convenient (not to mention delicious) way to add protein. But if prawns aren’t your thing these flavours are also amazing with chicken, sausages, fish, pork or eggs.

FRIDAY

Aussie Burger Bowls

One of my new favourite convenient ingredients is vacuum packed cooked beets. I can’t tell you how much I love them.

So, it was only a matter of time before said beets found their way into a burger recipe. Because one of the great culinary contributions Australia has made to the world is the addition of sliced beetroot onto the humble hamburger.

Seriously it’s the best.

SWEET TREAT

Little Lemon Delicious Puddings

Bursting with fresh lemony goodness and that lovely natural sweet creaminess of almond butter. With some crunchy roast pecans to keep the texture interesting.

Reminds me of cheesecake. In the best possible way.
