2. Easy Spinach & Feta Frittata

When it comes to a super satisfying, healthy weeknight dinner, this simple Spinach & Feta frittata is as easy as it gets. Just mix three ingredients together. Pop them in the oven. Set the timer and dinner is done. Greens, protein and cheese all in the one tasty package.

While I tend to prefer fresh broccoli, this Green Curry of Broccoli Soup is also great made with frozen broccoli florettes. Just pop the frozen broccoli straight in the pan – it shouldn’t take much longer to cook and will save you the chopping step.

6. 4-Ingredient Cheesy Broccoli Bake

This super simple broccoli and cheese casserole ticks all the boxes for health, comfort and ease.
There’s no messing around with making a cheese sauce.
Just turn on your oven. Set the timer and put your feet up until dinner is ready.

7. Fast Roast Fish with Miso Mayo

I possibly should post a warning with this recipe. The mayo is so good as to be addictive. But at least it’s legal. And relatively inexpensive. There are worse things one could be addicted to.

The other thing I love about this recipe is the ease of popping the veg and fish on one tray. Plus I love roasting at high temperatures because it’s so much quicker and adds an extra element of danger.

I decided to just pop the whole cauliflower in a super hot oven and see what happened.

The result? Pure cauliflower alchemy.

We’re talking crispy deeply savoury crusty bits on the outside. Then melt-in-the-mouth cauli goodness in the middle.

16. Smoky Roast Mushroom Bowls

Mushrooms are one of my favourite veg. I love their earthy flavour and meaty texture. Normally I stick to the classic garlic and thyme to flavour them. But for some reason a few weeks ago I thought I’d experiment with Spanish-syle smoked paprika.

19. 60-Second Pistachio & Cranberry Hummus Bowl

Abundance Bowls like these have been my daily go-to for lunch for over a decade and I’m not going to stop.
This Hummus Bowl is one of my latest innovations where I start with a generous dollop (or 4) of hummus and then layer in the goodies on top.

I’m particularly in love with this Pistachio and Cranberry number. The nutty crunch of the pistachios and chewy sweetness of the dried cranberries are just the thing to take good old wholesome hummus into a new stratosphere of flavour.
