1. Frozen Spinach and Eggs (3-Ingredients)
Last minute plan changes happen. So it pays to be prepared and have a plan-B recipe at the ready that is a) incredibly low effort b) delicious c) satisfying. These green frozen spinach and eggs tick all the boxes.

2. Easy Spinach & Feta Frittata
When it comes to a super satisfying, healthy weeknight dinner, this simple Spinach & Feta frittata is as easy as it gets. Just mix three ingredients together. Pop them in the oven. Set the timer and dinner is done. Greens, protein and cheese all in the one tasty package.

3. Easiest Baked Bolognese
This is my go-to bolognese. It doesn’t quite have the same depth of flavour as my Irishman’s 2-day ragu, but between you and me, it’s pretty close.

4. Addictive Green Curry of Broccoli Soup
While I tend to prefer fresh broccoli, this Green Curry of Broccoli Soup is also great made with frozen broccoli florettes. Just pop the frozen broccoli straight in the pan – it shouldn’t take much longer to cook and will save you the chopping step.

5. Magic Pesto Supper (3+ Ingredients)
This is the type of food I love to cook on those nights when it’s been a long day and I just want something warm and green and satisfying.

6. 4-Ingredient Cheesy Broccoli Bake
This super simple broccoli and cheese casserole ticks all the boxes for health, comfort and ease.
There’s no messing around with making a cheese sauce.
Just turn on your oven. Set the timer and put your feet up until dinner is ready.

7. Fast Roast Fish with Miso Mayo
I possibly should post a warning with this recipe. The mayo is so good as to be addictive. But at least it’s legal. And relatively inexpensive. There are worse things one could be addicted to.
The other thing I love about this recipe is the ease of popping the veg and fish on one tray. Plus I love roasting at high temperatures because it’s so much quicker and adds an extra element of danger.

8. Lara’s Amazing Adobo
There’s something so magical about the combo of garlic and soy sauce that will have your house smelling sooo good. And if you take the slow cooker option your house will have amazing aromas for the whole day.

9. Flavour Bomb Egg Snacks
Boiled eggs can be an incredibly delicious treats. You just need to get a little creative with your accompaniments.

10. Vietnamese Carrot Bowls
This Vietnamese-inspired idea popped into my head when a packet of shredded carrot followed me home one day.

They’re something I love to make for school lunchboxes because they tick a lot of boxes:

I adore these with frozen veggie ‘rice’. I always have veggie rice in the freezer so I can whip these up whenever I need a comforting plan-B dinner.

Abundance Bowls like these have been my daily go-to for lunch for over a decade and I’m not going to stop.
This Hummus Bowl is one of my latest innovations where I start with a generous dollop (or 4) of hummus and then layer in the goodies on top.
I’m particularly in love with this Pistachio and Cranberry number. The nutty crunch of the pistachios and chewy sweetness of the dried cranberries are just the thing to take good old wholesome hummus into a new stratosphere of flavour.

This Lovely Lemon Ragu an excellent one to have up your sleeve if you need to cater for anyone with nightshade intolerance. And while I’m thinking about it can imagine it would make an amazing lasagna.

22. Peanut Butter Ice Blocks
‘Ice Blocks’ are what we literal-minded Aussies call icy poles or popsicles.
Sometimes I do fruit and yoghurt but these peanut butter ones are always a crowd pleaser.

23. Lemon & Pine Nut Oven Supper
When it’s been a long day (and even when it hasn’t) I LOVE an ‘oven supper’.
Just pop some protein and frozen veggies on a tray. Get them in the oven. Mix up a little sauce (or not).
And then hey presto you have an incredibly satisfying dinner at your fingertips.
