1. Abundance Bowls
This is my go-to lunch pretty much every single day. But wanna know the magic? I never get bored because every day is different. Different protein, different veg, different sauce. Endless possibilities.
2. Sunny Parisian Carrot Bowls
Carrot salads are awesome for lunches because you don’t have to worry about delicate leaves wilting on your way to work.
3. Spinach & Eggs
These green eggs tick all the boxes…a) incredibly low effort b) delicious c) satisfying and d)good for you.
4. Pesto, Olive & Feta Frittata
Frittatas are excellent for lunch because you can make them in advance and then just let them come to room temperature to serve. No need to faff around with reheating. The idea to combine these three powerful flavours came from a lunch I had at a fave local cafe. It’s an absolute flavour explosion.
5. The Ploughman’s ‘Pie’
A ploughman’s lunch is normally a plate of cheese, ham, mustard and pickles served with crusty bread. I love using these hearty flavours in a more low carb-friendly way. Which has the bonus of being more portable as well.
6. Fast Friday Cheeseburger Bowls
I’d take these flavour packed bowls after a regular carby burger any day. Make a double batch for dinner and then you can thank yourself when you pull these out of lunch the next day. Equally good cold or warmed up.
7. Sensational Savoury Yoghurt Bowls
If you’re a yoghurt fan (like me) then I have a treat for you! These Savoury Yoghurt Bowls have recently overtaken my Abundance Bowls as my favourite go-to lunch and dinner.
8. Chickpea Buddha Bowls
In case you’re wondering, buddha bowls are “a bowl which is packed so full that it has a rounded ‘belly’ appearance on the top much like the belly of a buddha.”
9. Lime & Tahini Kale Salad
This is a great recipe to have up your sleeve because it will happily sit around for a while without wilting
10. Easy Almond Pizza
This simple pizza delivers all the comfort and flavour without the mid afternoon carb slump. It works equally well hot from the oven OR made in advance and served at room temperature.
