MONDAY

Easy Green Smoothie Bowl – Warning! If you’re looking for a sweet green smoothie bowl, this recipe ISN’T for you.

BUT if you’re open to the idea of an incredibly delicious savory Easy Green Smoothie Bowl you’re in the right place.

A few weeks ago a random food memory popped into my head about the spinach dip my mum used to make with sour cream and french onion soup and serve in a cob loaf with the insides torn out and used for dipping.

Man I loved that dip.

It happened to be lunch time. And while I didn’t have and sour cream OR French onion soup, I DID have spinach in the freezer AND I had Greek yoghurt.

So lunch became this savory yoghurt bowl.

TUESDAY

Supermoist Meat Loaf – I’ve always been a huge fan of meatballs and burgers and all things ground (minced) meat. And after falling in love with my meat ‘diamonds’ I decided it was time to tackle the humble meatloaf. Surely I could work some magic.

And so I did. I was thinking of ways to keep my meatloaf super succulent. And was reminded of how carrot cake and my zucchini cake had such beautiful texture. Surely the same principle could apply in savoury form.

Long story short, it does. This meatloaf has it all. Deeply flavoured from the beef and the tomato. And so so moist. Even my boys love it.

WEDNESDAY

Lebanese Omelette with Almond ‘Hummus’ – Za’atar is a middle eastern spice blend containing sumac (a lemony flavoured spice), thyme, salt and sesame seeds. It’s traditionally sprinkled on flat bread but it also adds freshness and flavour to everything from vegetables to eggs to chicken to fish.

It’s a worthy addition to your spice collection.
But of course there are alternatives below if you happen to be ‘between-packets-of-za’atar’ at the moment.

And I’m addicted to this almond ‘hummus’.

Love having a low carb, incredibly delicious alternative to the classic chickpea based sauce.

With the cumin and lemon, it’s a surprisingly close match. And so easy to make if you have a stick blender.

THURSDAY

Lemon & Pine Nut Oven Supper – When it’s been a long day (and even when it hasn’t) I LOVE an ‘oven supper’.

Just pop some protein and frozen veggies on a tray.
Get them in the oven.

Mix up a little sauce (or not).

And then hey presto you have an incredibly satisfying dinner at your fingertips.

Talk about low effort for maximum deliciousness.

FRIDAY

Everyone Happy Nachos – I’m always trying to come up with ideas for family meals to suit all our different dietary requirements. Without having to cook separate meals.

These nachos definitely live up to their name of keeping everyone happy.

I like zucchini version. My Irishman likes ‘both’ – some zucchini and some corn chips. No prizes for guessing the boys prefer corn chips.
