Magic Meal Plan: Week 18

MONDAY

Tofu Not-Pizza – Credit where credit is due. The idea for this came from Dhanya, the daughter of one of the founding members of my ?Naturally Healthy Club? coaching group.

I’ll let Supraja (Dhanya’s Mum) tell you about it…

“This (Grilled Cheese Tofu) has to be the most brilliant recipe I have seen in recent times. My daughter watched the video with me and insisted we try it. She also suggested another version with pizza sauce and mozzarella. We tried both and loved it. Only problem- I made two servings and there were the four of us so there was a bit of fighting in the house ? ?”

TUESDAY

One Pot Miso Salmon – My friend Aggie gave me the idea for this dish.

Layering veggies and salmon in a pot and cook with a miso sauce so the salmon steams. It’s about as simple as dinner can get.

I love how the steamed fish and veggies feel so nourishing and wholesome.

And with the miso juices, incredibly delicious. You’re welcome!

WEDNESDAY

The ‘Next Day’ Shakshuka – Shakshuka is a North African dish of eggs cooked in a tomatoey sauce. While it’s commonly served for breakfast, it also make a fab meat-free dinner.

It’s also a brilliant way to turn leftover cooked legumes or veg into a brand new meal. Which is where the ‘next day’ part comes in.

THURSDAY

Spiced Chicken with Hummus – This is a twist on one of my all time favourite go-to minimal effort meals.

In the past I’ve used ground beef but I was surprised how much I enjoyed this lighter chicken version.

FRIDAY

Burgers with Mint & Almond Salsa – I am so in love with nut salsas at the moment. The idea of a chunky crunchy sauce that works to both flavour and provide substance is so useful to have in your repertoire.

It’s amazing for turning a humble burger patty into a truly special meal. But also works equally well with fish, chicken or even an omelette.

SWEET TREAT

Little Chocolate Hazelnut Cheesecakes – Often on a Saturday night, when my Irishman and I are having our ‘movie night’, we get the urge for ‘something sweet’ after dinner. Generally I don’t have anything planned so need to come up with something quick and diabetic-friendly at the last minute.

These little chocolate ‘cheesecakes’ tick all those boxes and then some. They’re creamy, crunchy and there’s chocolate!
