MONDAY

Zucchini, Basil & Feta Soup

How can you not love zucchini? It has a beautiful subtle buttery flavour when cooked. It’s low carb. It doesn’t cause problems for my Irishman’s IBS. It’s easy to grow.

Repeat after me… ‘Zucchini is YUMMY!

I first made this soup for lunch at my Dad’s place just before we went into COVID lock down.

TUESDAY

Spiced Chicken with Ginger Almond Sauce

It’s funny but the older I get, the more I love ginger. I love the freshness I love the warmth. I love how it makes my tastebuds glow.

And while it is wonderful added at the beginning of cooking so the ginger flavour mellows an permeates the whole dish, I secretly prefer raw ginger in all its magnificence added at the end.

This sauce is the perfect showcase for all things ginger. Especially if you do as I suggest and add the ginger in little flavour explosion chunks.

WEDNESDAY/

Spinach & Feta Burgers

I love a good veggie burger. Especially when they contain actual vegetables like these.

This is one of those super versatile recipes that is excellent to have up your sleeve. Using frozen greens it’s basically a pantry recipe. But you can also cook the burgers ahead and have them stashed in your freezer ready to cook from frozen. Like I said, super versatile.

Spinach and Feta work so well together. The feta provides loads of flavour but also that satisfying texture so you feel like you’re getting a proper feed.

THURSDAY

Lamb (or Beef) Korma

Lamb Korma is usually made with chunks of lamb slow cooked until you can cut them with a spoon, but I actually prefer this quicker (and more economical) everyday version using ground (minced) lamb – or beef.

While it may not look the prettiest, it certainly wins when it comes to creamy curry flavour and soft (easy to digest) texture.

FRIDAY

Simple Salmon with Pistachio Salsa & Ginger Cream

If you love ginger like I do, you have to make this ASAP!

The ginger sour cream is so so delicious and makes the most refreshing sauce for simple roast salmon.

Plus there’s the beautiful crunch of pistachios.

And the fragrance of basil.

Like I said you have to make this one!

Last-Minute Peanut Butter Mousse

You know those nights when you decide after dinner that you really need something else to eat? But you haven’t organized anything? Well, my friend, I’m going to share with you my favourite little last-minute indulgence. Mostly it’s something I whip up for myself, but occasionally I share it with company and grandly call it my Peanut Butter Mousse. But it’s also great as a post-run snack.
