MONDAY

Spiced Chicken with Avo ‘Hummus’

‘Things on hummus’ is one of my favourite go-to meals.

I love how the hummus doubles as a comfy accompaniment and a tasty sauce. Like mashed potato but with loads more flavour and none of the blood sugar crashes. Actually in my opinion it’s a million times better than mashed potato.

TUESDAY

Easy Almond Pizza

As much as I love eating my Zucchini Pizza and Cauliflower Pizza, they can be a little high effort given you need to grate the veg.

So I was thinking of how could I make an even easier pizza for weeknight dinners that would be a) low carb and b) enjoyable for the whole family.

Which gave me the brain wave to replace the veggies with extra almond meal and extra eggs. Talk about a winner!

WEDNESDAY

Asian Beef & Cabbage

I just love cabbage cooked in this way because it ends up a little bit soft and a little bit crunchy. It’s also delicious because it has all the comforting vibes of soft rice noodles. I’ve used Savoy (Napa) cabbage here but any white cabbage, including Chinese cabbage will be great.

THURSDAY

Slow Lime & Coconut Chicken

Just throw lime, salt, coconut milk and chicken in the slow cooker (or a casserole dish if you want to go the oven path). Then cook until the chicken is super tender and the chicken juices have combined with the fresh lime and the creamy coconut to give you a sauce so delicious, you’ll want to serve it with a spoon so you don’t miss a single drop.

FRIDAY

Japanese Salmon Oven Supper

I just can’t get enough of this coleslaw mix roasted with salmon, soy and maple.

I just love how the sweet salty sauce cooks down with the cabbage and carrot to make the most delicious vegetable experience.
Think comforting like a big bowl of udon noodles but a million times more flavoursome (and a million times better for you). This is one comfort food that won’t leave you feeling heavy like you’re wearing a lead blanket afterwards.

SWEET TREAT

Chocolate and Nut Butter

OK so I know you don’t really need a recipe for this, but I thought I’d write it for you anyway.

This is my latest go-to when I feel like having dessert on a Saturday night.

It only takes a second to pull together and satisfies that urge for something to round out the meal. Without loading you down with sugar and carbs.
