MONDAY

Aussie Burger Bowls

One of my new favourite convenient ingredients is vacuum packed cooked beets. I can’t tell you how much I love them.

So, it was only a matter of time before said beets found their way into a burger recipe. Because one of the great culinary contributions Australia has made to the world is the addition of sliced beetroot onto the humble hamburger.

Seriously it’s the best.

TUESDAY

Sunny Parisian Carrot Bowls

Apart from potatoes, my Irishman has a thing for carrot salads. So when I came across the ‘carrots from the charcuterie’ in my friend Clotilde’s fab book ‘Tasting Paris’ I started playing around.

The secret is to use the best carrots you can. I had a bunch from my friend Ellen’s garden which were out-of-this-world good. But I’ve also had success with baby carrots from my green grocer.

If your carrots don’t have their tops (or if the tops are a little sad) just use a bunch of parsley instead.

WEDNESDAY

Hearty Walnut, Kale & Goats Cheese Frittata

I love a good frittata at any time. But this one with walnuts and kale is especially substantial and fab for a meat-free dinner where you won’t be missing the meat (my Irishman didn’t). It’s also good for lunches the next day.

And I love that it’s a complete meal on its own. No need to add a sauce or side salad.

Green Curry Stir Fry

The idea for using Thai green curry paste as a sauce to season a stir fry came from my favourite food writer, Nigel Slater. To be honest I wasn’t sure it would be very good but as usual when I trust St. Nigel everything turns out much more delicious that expected.
