7 Simple Ideas for Cabbage

[dropcap style=”font-size: 60px; color: #00adef;”] T[/dropcap]his may be a bit controversial, but this Winter I’ve switched allegiences for my favourite veggie.

While I still adore my cauliflower, broccoli, beets and kale, I think cabbage has recently become my new numero uno.

At least until the Spring asparagus and broad beans arrive…

7 Simple Ideas for Cabbage

1. Boiled Cabbage Tossed in Butter.
I know! Boiled cabbage actually tasting delicious? Part of me can’t believe I’m writing those words either. But after a very skeptical first experiment, I’m now not only a fan but completely addicted.

Just finely slice you cabbage and bring about 2cm (1in) salted water to boil in a large pot. Add the cabbage, cover and cook for about 5 minutes or until cabbage is soft and no longer crunchy. Drain. Return to the pan and toss in lashings of your best butter and lots of pepper. Use anywhere you’d normally serve pasta or noodles.

2. In Cabbage Lasagna
So far the number 1 most popular recipe on my online cooking school website is my Cabbage Lasagne. I couldn’t be more proud! Basically just cook cabbage as above and use it instead of pasta to layer with your usual lasagna recipe.

3. As a Tortilla / Wrap Replacement
When we have taco night, I warm up corn or flour tortillas for the boys and wrap my fillings in cabbage leaves instead (pictured above). They don’t know what they’re missing! Love how the cabbage is so much fresher and crunchier than your regular tortilla. Also great as a wrap like these Cabbage Wraps with Chickpeas & Za’atar.

4. Shaved Cabbage Salads & Coleslaw
My first cabbage love. And still a regular on my table. Shaved Cabbage Salad with Parmigiano Reggiano & Aged Balsamic. It sounds fancy but is another example of how a few good quality simple ingredients can come together to make truly outstanding food.

5. Roast Cabbage
This used to be my favourite way to cook cabbage, until I made my leap of faith with the boiled cabbage thing. Especially love this Fast Roast Cabbage with Crunchy Bacon Gremolata and my Magic Sausage & Cabbage Supper

6. Sauteed Cabbage
Can’t stop eating Darya’s Egg Fried Cabbage. One of the simplest recipes on Stonesoup and one of the tastiest. If you’re looking for the best place to start appreciating cabbage this would be it! Or if you need to keep a carnivore happy try my Irishman’s favourite Bacon & Cabbage.

7. Fermented!

How to Store Cabbage

A whole cabbage keeps for weeks if not months in the fridge. I just keep it wrapped in a plastic bag to prevent dehydration and wilting.

Cut cabbage will brown on the surface but I just slice off and discard the exposed bits.

  • Yes, I agree. A truly versatile vege. I always had a thing for broccoli, for years it was my favourite vege. Over the last 5 years I have gradually come to prefer cabbage. There are so many things you can do with it and I love how filling it is – some vegetables don’t seem to fill me up, but a plate of cabbage will keep me going right through to the next meal without hunger in between.

  • Cabbage has long been a favorite of mine – I like it steamed and drowned in butter. And roast. And, one of my favorites from childhood: chopped cabbage sautéed in bacon fat, combined with pasta shells and a healthy dose of black pepper… I also like sauerkraut and have had success the one time I tried making it.

  • I love the cabbage in butter, but I fry some onions in the butter before I add the cabbage back…. add some chili flakes…. yum!
