While I’m not vegan, I am super passionate about helping people eat more vegetables.
I love vegetables.
A few months ago I had this idea to collaborate with Leo from Zen Habits (who is vegan).

Thank you for this Eat More Plants ebook! Just made the Creamy Coconut Lentils as written! Super yummy. I added about 1 tsp salt, and some pepper. I served it over brown rice. (I will eat it as 4 servings as the serving size for the lentils = 1/4 cup, or 50 grams, and that is 15 grams of fiber) My stomach won’t handle more than that in a day if eating beans or lentils! Next time I will add some chopped cauliflower : )

Thank you!! This is so timely. I am trying to get more, easy to assemble, and delicious veggie/vegan recipes to use in my kitchen. My hubby is a devout carnivore, but that doesn’t mean that I can’t tempt him with any of these dishes and add a little meat on the side to keep him satisfied, and everyone healthy. I can always trust you to put together some great ideas. Well done and thanks again.
