Recently I had a trip to Adelaide to catch up with some dear old friends. I was reminded how handy it can be to have some good do-ahead dinners in your repertoire.
For those days when there’s not going to be much (if any) time to cook.

6 Delicious Do-Ahead Dinners
1. Zucchini Falafels
It was a memorable meals while traveling in Jordon that inspired this recipe. I wanted something less carby and fresher. And baked not fried because lets face it.

2. Perfect Pulled Pork
If you need to feed a crowd, this pulled pork is always a winner on many levels.

3. Plan-B Dry Curry
Ever heard of a dry curry? Me neither until one my my coaching clients Julia posted a photo in our group.
I was immediately intrigued and decided to play around with my own version. Talk about a brilliant dinner to have in your back pocket. So packed with flavour and yet so quick and easy to prepare.

4. Easy Mushroom Loaf
This Easy Mushroom Loaf recipe was actually inspired by an idea for a low carb bread. The first few versions used had sliced mushrooms throughout the loaf – which was delicious but a little tricky to carve.
So one day I thought I’d see what happened if I pureed the cooked mushrooms.

5. Cherry Meatballs
You heard it here first folks.
The tomato is about to be dethroned as the go-to fruit for your meatballs.
Enter the delicious cherry. Especially the incredibly convenient, de-pitted frozen cherry.

6. Slow Moroccan Apricot Chicken
This Moroccan-ish Apricot number is a winner on all fronts.
The tomato paste gives a strong flavour foundation with highlights from the spices and sweetness from the apricots. And of course succulent chicken courtesy of our friend the slow cooker.

As a meat-lover, everything in this recipe is definitely a hit! My favorite is the dry curry. This might be the first site that featured this unique recipe. I thought it was weird at first but it’s really worth a try.
